The first one looks quite like a Trichocereus Terscheckii.

1st one could be stetsonia coryne, opuntias, well, there are over 300 species IIRC

So is there really no way to tell a species of opuntia without in depth testing?

Looks like one of the real cold hardy ones that creeps low to the ground. It shouldn't get very big. Looks like the local prickly pears out here (smaller ones that fit in a bucket).
