Pasty plates full of water after pressure cooking

Hey folks I just made plates for my fourth agar transfer and had something odd happen. 5 of my 10 plates were full to the rim with water. I used 3 quarts in the cooker like I have every other time but somehow this time it ended up in the plates. I have no clue what I did differently than all the other times. The water level after completion was definitely lower in the pot. I did wait 48 hrs to remove the plates from the pot vs 24 the other times. I also preheated the water with the lid off while I finished prepping the plates but I don’t think I lost that much water as it started steaming. Any ideas? Also the agar in several wasn’t level like they tilted bad but I always used a few pint jars that are heavy to sandwich in the lighter plates. Those 3 heavy glass jars were 3 or the 10 survivors. 3/4 of the plastic containers where either full of water or so in level that I couldn’t used them. 15psi for 1 hour was the cook time. I also use a paper towel and full wrap in tin foil. Thanks for any info on what when wrong.

Your plates where to low to the water. My guess..

I suggest to raise them a little..

5 tuna cans works for me with the canning rack on top of the cans..
No need to fill above the rack with water.

It’s strange. My water wasn’t any higher than before . Just barely touch the plates after putting 5 mason jar lids down with the metal plate on top of it. The water just barely touched the pasty plates.

Water has a way of migrating up the side of a jar or plates/bags under the right condition. That why I don't like submerging my product in water. It's not necessary.
