Oyster grow buckets. Colonisation

Hi, this my first time growing oysters on straw. I pasteurised the straw using hydrated lime For 18 hours and then layered with 10% spawn rate in 15L buckets. I have 18 12mm holes evenly spaced around the bucket and some smaller drainage holes in the bottom. I put cover buckets on for colonisation. I made up about 35 on April 14th. It’s now May 20th and They still haven’t fully colonised, although I am starting to see mushroom growth between the buckets. The growth pattern seems to be quite uneven. I’m not Quite sure what is  going on. Do I take off cover buckets for more airflow? Do I try and fruit these now? Thanks in advance for any help. I’m new to this and any pointers would be much appreciated.

Yea those are fruiting. No doubt. just based on how long ago you did them up.  If by cover bucket you mean like we usually do with a trash bag to restrict air flow for colonization yea. They should have been taken off on April 28th to put into fruiting. Long time ago. Even if it doesn't look fully colonized.. it pretty much is after 2 weeks for growing Oysters. Uneven fruiting patterns on buckets are normal.
