Not a cactus, probably a Euphorbia sp.

How can you tell? And is there any way to find out what species?

The flowers are unlike cactus flowers. It has really been bugging me as to what it is!
It does look like it could be a young Euphorbia viguieri or var/ssp such as E. viguieri var. ankarafantsiensis.

I'm sure there are tons of books on cactus, succulents, mesembs, etc. Euphorbias have both thorns and leaves coming from their stems and its one of the most noteworthy features. Crown of Thorns is a good example.

For succulents, I don't know. It looked familiar but I couldn't place it so trawled a few sites, google images, trying different keywords until I narrowed down an ID.

Lots of public domain cacti & succulent books here : http://www.cactuspro.com/biblio/en:accueil
