I'm a huge fan of smoked anything but surprisingly not so keyed into smoked cheese. Some of it is done right others simply are not.

The trick is to not to smoke it too much and use a light wood (like Apple or Cherry).

Yes I think that might be it. For things like BBQ or smoked meat in looking for that intensity. I want to taste and feel like I'm eating a smoking piece of wood. Whereas maybe in cheese u just want that light delicate touch of smoke.

Smoked cheese Swiss or cheddar to snack on I'm not picky I like provolone cheese on ham sandwiches and pizza subs

Like a heavily smoked piece of cheese is like taking a shot of liquid smoke or something. I mean u killed and burned a bunch of tree I want to experience the essence of that not some insanely condensed 100 tree version it loses that magic idfk.

I became lactose intolerant about 5 years ago, so I switched to goat cheese. I buy country jack with jalapeño pepper by the case and make some delicious gluten-free pizza with it.
I also like the "Guusto" squeaky goat cheese, which can be baked to crispy perfection on a skillet.

I used to be lactose intolerant when I was little. I grew out of it but really I just think they fed me what would have been considered thruout human history as an absolute shitload of bovine dairy and over time a grew a tolerance. I still don't enjoy most dairy products with the exception of cheese.

Feta, because I've loved it as a kid, that's why .
It's extremely versatile. Add it on pizza, salad, a sandwich/pita, have it on a plate drizzled with EVOO. Straight snack on it.

I like cheese.
I like a good bougie wine and cheese board as well. I prefer camembert and goat cheese to brie, and am a fan of most aged choices like gouda, cheddar, gruyere.
One thing I am very lukewarm on is blue cheeses. I'll eat them if they're apart of a dish, but I'm just not a huge fan.

One time I got a goat cheese, I dont remember if it had a name, it reminded me of cream cheese

I love goat cheese . It's got a similar consistency to feta imo - maybe a bit creamier. I'm not super well versed in the various fancy types of chevre cheeses that exist, but I do like it in general. I cook frittatas with it, make pizza with it, and even have had it in salads
