I can eat so much cheese it's crazy Brie is probably my top 'every once in a while cheese'
This is what I'd consider one of the best every day cheeses

I've eaten a whole wedge on its own like that with a knife
And proper hard aged parmesan it's essential

I just read something interesting: some Blue Cheese like Goronzola contains Penicillum Glaucum and thereby, its penicillins guard the cheese against contaminations.

Probably taleggio cuz its has all h The best elements of a serious cheese. Its deliciously textured and has rich creaminess that expresses itself as something quintessentially dairy yet it has that right amount of tang that keeps the flavors layered and dynamic. Least that's how I feel about it. Obviously there's different styles of cheese for different occasions. So its really hard to pick a favorite. Like I wouldn't say its my fave funky punch you in the face cheese nor my favorite creme bomb. Its just well rounded.

I enjoy lyden for the little seeds that remind me if dutch

Grana padano is my cheese for italian food because it is rich nutty with texture

Man the most notable cheese I've had of late especially in the vien of inclusionary cheese was this truffle pecorino. The pecorino was just delicious in itself and well aged with large calcium crystals and all this. But what was most remarkable was the insane amount of truffle within. I mean I've had truffle stuff before but idk what it was I've never had some kind of like truffle rush from cheese b4. I had some kinda insane truffle buzz that left me craving the flavor for days like a coke hit or something. It stands to reason as the cheese seemed to be nearly as expensive by weight as cocaine

My current favorites are PepperJack, Marbled Jack Cheese and Cheddar. Even American can be pretty good too.

It is so hard to choose a favorite cheese because they are all delicious to me. I haven't had some of the stankier ones like Limburger, but I would love to try it out.
One of the best cheeses I had recently was a white cheddar with truffles with an insane level of nutty flavor, and so very creamy! I couldn't believe it was cheddar, hot damn!
For every day cheese needs I usually go with Swiss or a sharp cheddar. I try to avoid buying pre-shredded cheese mostly but I get lazy from time to time, especially if it's taco night.
