My new favourite cheese is authentic Parmigiano Reggiano, I like to eat it with salami, I also like it because its a unpasteurized cheese, and I just found out the rind is edible in the authentic stuff, you can simmer it into pasta sauces or soups, im making some chicken stock that will be ready in 30 minutes, I added two rinds from the 2, 200g bricks I bought, the only downside is that normal cheese here is like $5 for a huge block, and the Parmigiano Reggiano was $10 for a 200g brick, ill post again in this thread if the chicken cheese stock im making is delicious

I dont think I ever tried blue cheese, I tried a blue cheese salad dressing once and didnt like it very much, but im sure that its not the same experience as eating actual blue cheese

Dutch Edammer (Edam) Cheese.
Not the kind they make everywhere in the world but the real Edammer from the city of Edam or at least elswhere in Holland.
Its mild of taste yet it has flavor in a good way. They come in balls, red or yellow, typically weighing 3-4 lbs.
Its not an expensive cheese so households tend to buy whole ones, since its only 0.8-2kg.

Either blue cheese is really good or it’s shit in my opinion. Steakhouses usually have some fire blue cheese.

My personal mainstays for when serving french bread are:
zesty Brie Boursin sharp blue cheese
Everybody knows Boursin right, I take it thats in supermarkets everywhere:

Its a cream cheese with garlic and herbs, can't really go wrong with it.

Do you know if Burrata is unpasteurized? Im looking for a good raw cheese that melts, so I can make pizza and grilled cheese and stuff
But Im thinking soft raw cheeses are not sold in Canada, I can only find hard cheeses

Not sure, I doubt it would be good for grilled cheese. It's like mozz shredded with cream inside, heavenly on a pizza.
"Burrata is classed as a soft cheese, for the purposes of pregnancy safety. This means it's safe to eat if it's made from pasteurized milk. Because it also contains cream in its center, this should also be made from pasteurized or ultra heat treated (UHT) milk to be safe for pregnant women."
Probably gotta check the label, I just threw out my container so not sure

Mozzerella on pizza isnt real mozerella though.
Mozzerella, the real deal, costs about $8 in Italy per tiny ball.
Likewise "American Cheese" is not cheese at all but a factory concoction.

I'm going to say cheddar.
Now yes, fancier cheeses are more fancy. I like them. goat cheese and havarti, etc are all good.
but if i want some pasta, or some nachos, or some cheese and crackers or any number of things i would be dissapointed if there was no cheddar. I wouldnt really miss fancier cheeses as much when it comes to the classics. on a burger or a grilled cheese, cheddar just feels right.
for specific fancy dishes you need fancy cheese but ultimately cheddar is my favourite.
not too old, medium is probably my sweet spot.

I dont like the old cheddar for most stuff, but if you cant afford parmesan the old cheddar goes good grated on soups

You can get real American cheese. Just don't get Kraft Singles or those fake cheese products
I didn't say mozz now did I? I said Burrata. Way different then mozzarella
