My new favourite cheese is authentic Parmigiano Reggiano, I like to eat it with salami, I also like it because its a unpasteurized cheese, and I just found out the rind is edible in the authentic stuff, you can simmer it into pasta sauces or soups, im making some chicken stock that will be ready in 30 minutes, I added two rinds from the 2, 200g bricks I bought, the only downside is that normal cheese here is like $5 for a huge block, and the Parmigiano Reggiano was $10 for a 200g brick, ill post again in this thread if the chicken cheese stock im making is delicious

I dont think I ever tried blue cheese, I tried a blue cheese salad dressing once and didnt like it very much, but im sure that its not the same experience as eating actual blue cheese

Dutch Edammer (Edam) Cheese.

Not the kind they make everywhere in the world but the real Edammer from the city of Edam or at least elswhere in Holland.

Its mild of taste yet it has flavor in a good way. They come in balls, red or yellow, typically weighing 3-4 lbs.

Its not an expensive cheese so households tend to buy whole ones, since its only 0.8-2kg.

Either blue cheese is really good or it’s shit in my opinion. Steakhouses usually have some fire blue cheese.

My personal mainstays for when serving french bread are:

zesty Brie
Boursin
sharp blue cheese


Everybody knows Boursin right, I take it thats in supermarkets everywhere:



Its a cream cheese with garlic and herbs, can't really go wrong with it.

Not sure, I doubt it would be good for grilled cheese. It's like mozz shredded with cream inside, heavenly on a pizza.

"Burrata is classed as a soft cheese, for the purposes of pregnancy safety. This means it's safe to eat if it's made from pasteurized milk. Because it also contains cream in its center, this should also be made from pasteurized or ultra heat treated (UHT) milk to be safe for pregnant women."

Probably gotta check the label, I just threw out my container so not sure

Mozzerella on pizza isnt real mozerella though.

Mozzerella, the real deal, costs about $8 in Italy per tiny ball.


Likewise "American Cheese" is not cheese at all but a factory concoction.

I'm going to say cheddar.

Now yes, fancier cheeses are more fancy. I like them. goat cheese and havarti, etc are all good.

but if i want some pasta, or some nachos, or some cheese and crackers or any number of things i would be dissapointed if there was no cheddar. I wouldnt really miss fancier cheeses as much when it comes to the classics. on a burger or a grilled  cheese, cheddar just feels right.

for specific fancy dishes you need fancy cheese but ultimately cheddar is my favourite.

not too old, medium is probably my sweet spot.

I dont like the old cheddar for most stuff, but if you cant afford parmesan the old cheddar goes good grated on soups

You can get real American cheese. Just don't get Kraft Singles or those fake cheese products

I can eat so much cheese it's crazy
Brie is  probably my top 'every once in a while cheese'

This is what I'd consider one of the best every day cheeses



I've eaten a whole wedge on its own like that with a knife

And proper hard aged parmesan it's essential

I just read something interesting: some Blue Cheese like Goronzola contains Penicillum Glaucum and thereby, its penicillins guard the cheese against contaminations.

The best elements of a serious cheese. Its deliciously textured and has rich creaminess that expresses itself as something quintessentially dairy yet it has that right amount of tang that keeps the flavors layered and dynamic. Least that's how I feel about it. Obviously there's different styles of cheese for different occasions. So its really hard to pick a favorite. Like I wouldn't say its my fave funky punch you in the face cheese nor my favorite creme bomb. Its just well rounded.

Man the most notable cheese I've had of late especially in the vien of inclusionary cheese was this truffle pecorino. The pecorino was just delicious in itself and well aged with large calcium crystals and all this. But what was most remarkable was the insane amount of truffle within. I mean I've had truffle stuff before but idk what it was I've never had some kind of like truffle rush from cheese b4. I had some kinda insane truffle buzz that left me craving the flavor for days like a coke hit or something. It stands to reason as the cheese seemed to be nearly as expensive by weight as cocaine  :shrug:

My current favorites are PepperJack, Marbled Jack Cheese and Cheddar. Even American can be pretty good too.

It is so hard to choose a favorite cheese because they are all delicious to me.  I haven't had some of the stankier ones like Limburger, but I would love to try it out.

One of the best cheeses I had recently was a white cheddar with truffles with an insane level of nutty flavor, and so very creamy!  I couldn't believe it was cheddar, hot damn!

For every day cheese needs I usually go with Swiss or a sharp cheddar.  I try to avoid buying pre-shredded cheese mostly but I get lazy from time to time, especially if it's taco night.

I'm a huge fan of smoked anything but surprisingly not so keyed into smoked cheese. Some of it is done right others simply are not.

The trick is to not to smoke it too much and use a light wood (like Apple or Cherry).

Yes I think that might be it. For things like BBQ or smoked meat in looking for that intensity. I want to taste and feel like I'm eating a smoking piece of wood. Whereas maybe in cheese u just want that light delicate touch of smoke.

I became lactose intolerant about 5 years ago, so I switched to goat cheese.  I buy country jack with jalapeño pepper by the case and make some delicious gluten-free pizza with it.

I also like the "Guusto" squeaky goat cheese, which can be baked to crispy perfection on a skillet.

I used to be lactose intolerant when I was little. I grew out of it but really I just think they fed me what would have been considered thruout human history as an absolute shitload of bovine dairy and over time a grew a tolerance. I still don't enjoy most dairy products with the exception of cheese.

Feta, because I've loved it as a kid, that's why :sunny:.

It's extremely versatile. Add it on pizza, salad, a sandwich/pita, have it on a plate drizzled with EVOO. Straight snack on it.

I like cheese.


I like a good bougie wine and cheese board as well. I prefer camembert and goat cheese to brie, and am a fan of most aged choices like gouda, cheddar, gruyere.



One thing I am very lukewarm on is blue cheeses. I'll eat them if they're apart of a dish, but I'm just not a huge fan.

I love goat cheese :thumbup:. It's got a similar consistency to feta imo - maybe a bit creamier. I'm not super well versed in the various fancy types of chevre cheeses that exist, but I do like it in general. I cook frittatas with it, make pizza with it, and even have had it in salads

Feta.  Any good feta cheese.  Bulgarian, French, Greek, Serbian....  I was raised on it, so I could take a hunk and gnaw on it all day. 

Man, you get you some fresh from the oven, warm, home made from scratch bread, pop a little feta in there and make a bread ball...that's some good eats.

Summer snack - take a green bell pepper and cut it into quarters.  Smash some feta cheese into that bitch and eat it.  Slice up some tomatoes and toss in some smaller feta chunks.  Let it sit for 1/2 hr or so in the fridge.  The salt from the cheese draws out the tomato juice and you sop that up with some bread.

I used to work at this itallian restaurant an the caprece salad and carppacio was the shit.

Ripe tomato, fresh mozzarella, olive oil, fresh bread, and the carpaccio with fresh arugula cured ham, capers olive oil lemon juice. OMG.

They changed Kraft Mac N cheese, not as much of a fan. I think they use natural ingredients now too.

Mozzarella for everyday use, but blue cheese for special occasions. I wouldn't want blue cheese on everything every day, it has to be saved for that special occasion when you want to kick it up a notch into something really unique and memorable. Honestly blue cheese tastes kinda like chemicals and cleaning products to me, but somehow I still enjoy it immensely. It's so unique and different.

Pepperjack is pretty good too though.

If I'm having a burger, it's gonna be cheddar or blue cheese generally.

lol I'm not all that far from Scranton spending some time to be with family, and it is a shithole. There's some decent nature in the area, lots of lake and vacation communities with lots of outdoorsy stuff that people from NY/NJ all come and take over every summer. But that's about it, other than the university. And it's not THE shittiest shithole in even Northeast PA - but the idea of tourists going there just because of the office always makes me crack up.

Where you really want to spend a weekend in NE PA is like...Jim Thorpe. WAY more fun and interesting.

Yeah, if ever there was a perfect encapsulation of boom town gone bust it's not only Scranton but pretty much every old PA(and WVA, and every other rustbelt state) coal town that didn't find a way to reinvent themselves(and it can be done! Pittsburgh and Bethlehem are both great examples of reinvented steel/rustbelt towns)..which is the majority, unfortunately. Lots of interesting history and sadness. 


The pizza is weird though, I have noticed that. There are Italian enclaves, and you can get good pizza, but there is some weird bad pizza that NEPA just loves.

Pizza downstate is much better, imho.

I believe what happened is NY being on the water was able to get fresher ingredients. So they got the best pizza.

As you move your way inland you hit them poconos and they had to use cheeses that would last longer. Just my theory

The things that make new haven apizza the best are the water and yeast strains here the flour and other ingredients they have access to through wholesalers. Napoli foods which is a big one simply imports all the best shit cuz they have the most people willing to pay the most money and decades of deals among family with the old country. We also have the ability to cold ferment the dough for longer and the like 100 years of seasoning on the wood fired brick ovens. This along with a few other crucial things is why u simply cannot replicate new haven style apizza.

I find that debatable.


I maintain that you can find world class pizza in just about any town these days(except down South for some reason). NYC is unique on the East Coast in the sense that it's harder to find bad pizza than good pizza. In other large cities on the East Coast there is still a lot of damn good pizza to be found, but the quality is never as consistent as it is in NYC, and due to it's size and density as a city, there is just an absolutely overwhelming amount of fantastic pizza relative to other places - in my experience.

Chicago is similar, but I'm a fan of deep dish and it's not for everyone.

It's worth mentioning that I've never had pizza in New Haven or CT in general, though. I've had Boston pizza plenty of times though :shrug:

Our bad pizza is like 10 notches above whats considered good most places. You just don't get it I'm telling you whats good I'm not just making shit up to sound cool. The further in radious you get from new haven the worse the pizza gets ok. With like new york Boston and even as far as Philly being acceptable and outside of that things start to get really iffy all the way to California where they put pineapples and shit on their pie. Its unbelievable. Chicago style is an abomination and not true pizza although sometimes good Detroit style is ok too but its like a Siciliano thats not pizza that a loaf of bread with cheese on it. I'm talking about pizza you take a bite and u always remember that moment for the rest of ur life. The real art. Like I said 10 notches atleast from what your calling good pizza.

...I actually don't mind pineapple on pizza. With a little bacon. It's a nice contrast of flavors :shrug: But if we're being pizza puritans over here, then yes I agree with you that the further you get from the Northeast corridor the shittier the pizza gets. I just disagree that New Haven is the epicenter of good pizza. But I suspect every town with any kind of Italian American enclave whatsoever will claim that they have the best pizza.

I have to disagree Old Forge is the most overrated pizza in all the world. American cheese and onions, get the fuck outta here, it's more like tomato pie or some shit. The whole state of Pennslyvania can't make a decent pie tried the most highly rated even in Philly and it's crap.

The American smcheese shit is that wierd Midwest element to old forge thats like garbage yah but also what give it a unique quirk and let's them explore more. some of the more traditional Italian offerings are on point. Is it as good as the tri state no way but its interesting for the mid west.

The worst ones for me are the ones that taste like spoiled meat. Its like an overly dry aged steak or something. It seems to linger on the pallette for quite some time. However some of them have such a complex layered flavor that tends to finish quite pleasantly. Mind blowing when done right traumatizing when wrong. It also helps to be drunk.

NYC is garbage kid. Fucking Naples Italy are you joking? They'd also claim they invented pizza. Pizza was invented by Italian Americans they dont even make pizza over there. They make Flatbread they dump a gallon of oil on it and because they've been poor in Europe for so many generations they put like one slice of cheese on it and its their favorite thing. The italians can't even figure out how to make a proper hamburger forget about pizza.

There is a show called "The Pizza Show" that's pretty good, this pizza shop owner from Brooklyn who went to chef school goes around to different areas with regional pizza styles and shop owners show him their style of making pizzas.

He does usually only go to places that are known to be really good for their area, so generally it will be a primo example of their regional style that he probably does really enjoy. But yeah he is careful not to step on anyone's toes too much or get into pissing matches about what style is the best.

I prefer a more Detroit/Chicago style pizza....like Jets, Unos, or Marcos as far as chains go.  Pan pizzas with some girth on them.  Down here in South Florida, it's New York Style mostly, which is "a'ight". It's just awkward to me to fold a piece of pizza in half to eat it.  Kinda creates a grease funnel sometimes so it drips on your shirt if you're high.

Ultimately, I feel pizza is like sex.  Even if it's not great, it's not bad either.

Plus if you go by that standard naples is no where close to the birthplace of pizza. Pizza has always been a part of human history its like the main cog thats brought us this far. The real story is pizza was invented thousands and thousands of years ago when some half ape human thing in Africa put a bunch of ground up grass paste on a hot rock and mixed it with some curd he got from the Arab at the corner bizaare. That man was later beaten to death with a large club by one Federico Pizzaroni who asconded with the secret recipe for the dish to Naples. Thats the real story they dont tell u in the history books.

That Old Forge place is a little bit of a trek from me...but it's only like 15-20 minutes from the dispensary I've been using out this way, so I might have to give this a try.

I'm skeptical, but optimistic. PA does food well, but per capita there's higher quality pizza in both NY and NJ(and yes, probably CT by virtue of proximity) and that's just a sad fact.

It is though. We normalize pizza snobbery in the northeast, and that's because we do it well, and that's that :shrug:. I can't say that I'm not a bit of a pizza snob myself.


I actually have been trying to perfect my pizza making game whenever I can get my hands on any kind of decent 00 flour. I'm just starting to figure it out. I heat the oven as high as it can go, and cook it on the stove stop on medium-high heat in a cast iron for 2-3 minutes first before transferring to the oven. And I always do home made sauce. 






Not the prettiest, but it's improvement :shrug:. In the future I'd probably leave it in one more minute.

Here's a pic of just like a standard no frills cheese from the place up the road. Not bad for a podunk cow town. If I wanted to drive like 15 minutes to New haven or pay out the ass for Uber eats I'd be into world class stuff.

'maryland style' pizza is really good. Although pretty much any independent pizza place here is different from each other, but the old ones have a similar, home style formula.

its basically thin deep dish.

the crust is soft and flaky, sauce is really sweet and the toppings are heavy.

DC is known for its jumbo slices, which are not that great

I have been eyeing this cheese that cost $25 for a huge hunk at the grocery store for the last month, its called "Grana Padano", I checked the label and its made with unpasteurized milk, I am under the impression that raw cheeses are more healthy for you so I want to try all I can find so I shelled out the money for this cheese

my initial thoughts were it taste like Parmigiano-Reggiano, but with a gross note to it, but I bought a huge brick so im going to eat it, but the more I eat the less gross I think it is, I actually enjoy it now

I just queried it to see if I can find out more about it, and wikipedia says that is indeed very similar to Parmigiano-Reggiano https://en.wikipedia.org/wiki/Grana_Padano


So after I finish this wedge I am going back to buying Parmigiano-Reggiano, cause the rind on the Grana Padano dosnt look edible, it looks like some sort of material is used, with the Parmigiano Reggiano I can put the rind in my homemade bone broths to add a umami flavour to my broth

if anyone knows some raw cheeses you can buy in Canada im all ears, especially if a raw soft cheese exists I could use on pizza or a ham sandwich, these hard cheeses are better for eating straight up or grated on soups and pastas or salads

Grana Padano is prized for pizza. I use Pecorino Romano these days, but have interchanged grana, pecorino and reggiano. I don't really enjoy munching on hard cheeses though.

I can't do it. It's just too gross tasting. I agree American cheese is good for some classic comfort food, but I can't do kraft. Something about the consistency and the aftertaste skeeves me out.

I started buying a brand called Tillamook ice creme,butter and cheeses
They cost a bit more but its well worth it

Yeah I know what you mean -- I don't mind it on burgers or a grilled cheese, but I had a bite of it by itself not that long ago (because I had kinda forgot what it tasted like just on its own) and it...almost tasted synthetic. It's just so incredibly processed. I think one would be hard pressed to find an expert cheese connoisseur who would say that Kraft counts as true cheese.

Tillamook is legit. My friend is hooked on Tillamook cheese. If u ever visit Oregon, check out the factory. Tons of ice cream and cheese flavors. Its like dairy Heaven. :heart:

Tilamook only makes the icecream the original way these days/original farm share of Oregon. Pretty sure they outsource the cheese.
