Help a n00b with his first shroom grow. 1

Howdy!
I just started my first mushroom grow and need a little clarification on a step. I am planning to do a monotub type set up, so let me list the process as I understand it and point out at what point I have a little confusion.
-inoculate sterile grain-bag and wait for mycelium to grow -mix mycelium (by squeezing bag) and leave for another week or so. -mix mycelium grain mixture into substrate mixture (planning on using Coco/verm)
-this is the step that I have a little hang up on. I understand how airflow and moisture are supposed to be maintained once pinning begins, but am I supposed to keep the substrate/grain/mycelium mixture sealed until the mycelium takes over the substrate? what initiates pinning? the addition of airflow? -ultimately my question is what triggers the fruiting? and how do I keep fruiting from happening when using a monotub while waiting for the substrate to colonize?
1 more extra credit question, at what point do I need to be adding light? as of right now I am keeping my grain bag in a dark closet.

To answer your question, introducing airflow which evaporates water from the surface is the main pinning trigger light is important too.
Depends what tub your using, a modified monotob you would tape up the holes and the Improper seal of the lid allows gas exchange. With a unmodified the lid would be the gas exchange and then you flip it over or slightly askew it to make a bigger gap for air.
Or simply put straight into 'fruiting' conditions and skip the colonisation, saving a fair ammount of time.
Light is benificial at all stages of growth

ok, I was planning on having some holes in the side of the tub with micro-pore tape covering them. so you are saying that I need to keep those holes sealed until I want fruiting to begin? I am assuming this is why people colonize substrate in a shoebox size tub that can be kept relatively sealed then transfer to fruiting chamber with airflow.

Yeah keep holes sealed and lid latched on that'll let it colonise. Personally I just double layer tape all holes then remove a layer after 3-4days.
With the added air exchange growth speeds up.
You can put it into fruiting conditions straight away and it will colonise and produce fruits faster, just keep an eye on the surface conditions.
Do you have a tek in mind, Probally better to just follow a tek for the first time and you see results

I guess I was following the monotub tek originally , but am considering upgrades like a perlite base layer or humidifier and fan. So I guess I am leaning more towards the PF tek but instead of using jars, using a shoebox size tub to colonize the substrate in. then take my colonized substrate brick and put it on a shelf above the perlite in the fruiting chamber.

Awesome, no need to be thinking about upgrading and pimping it out just yet unless you know it'll be needed. Like if you live somewhere really dry and arid then think about a humidifier.
Either of those methods will work, are you using spore syringes to inoculate the grain bags? It can work but not good practice better using agar.
I would make a couple/few shoeboxes in seperate tubs instead of putting all the eggs in one basket(if it is MS syringe that is).

Excellent advice Kmacmo 
I should mention to OP that growing PF tek is very different than a monotub. PF Tek uses cakes fruited inside a modified storage tote/chamber while a Monotub uses grain spawn in a tub (either modified or stock).
