Shroom candy recipes that'll last long

I've been looking for recipes to make shroom gummies but all of them only last a few weeks looking for a recipe that has a long shelf life like normal candy I've found a few normal recipes that could potentially last long but I would need to simmer off a lot off the water and I'm not sure how that'll effect the potency. Or I could use a lot of shrooms but I'm not sure how much psilo half a cup off water can absorb. Any insight on this?

I wouldn't try to do a liquid infusion. Probably evap the tea down to a crystal hash, then uniformly distribute that in the candy syrup as it cools. Pour into small, bite size molds and enjoy.
6 tbsp sugar 4 tbsp water 2 tbsp lemon juice 2 tbsp honey

Why not liquid infusion? And would that work? Boiling it down to a crystal?

I just powder dried shrooms and mix 9g of melted chocolate per 1g of shrooms and make 10g chocolates. Lasts forever and easy to calculate a dose.

Psilocybin is poorly soluble in water, 2 mg/mL. So for for 7oz, it's about 70mg of pure psilocybin requiring about 150mL of water. Because the candy recipe only needs ~30-60mL of water, you will need to evaporate it down a bit (or all the way to a powder even). As that happens, the psilocybin will crash out into white crystals.
It should work just fine. There is no need to boil it down. Infuse at boiling, then let it cool. Transfer to a 12x6 pyrex dish, cover with cloth, and put it in front of a fan. After a day or two, the water is all gone.
The other problem with using a water solution (assuming it's soluble enough) is you have to add it after the candy syrup cools, I wouldn't recommend cooking the syrup to hard crack temp WITH the psilocybin in it. Rather, add it as it cools below 200F. I do this same process with a 2:1 cannabis tincture, mixing in about 5mL to the syrup as it cools, which makes 12 candies in the end. The alcohol evaporates and the THC gets mixed in uniformly.

If you evaporate the "tea" all the way dry, I have heard that messes up potency.
But I think using water as a base, and letting mushrooms soak, then using that water with gelatin is probably the best bet.

Probably people who boiled it down? If you set it to evap at room temperature in a 12x6 pyrex, it should be fine. You can scrape up the extract with a razor blade and store it for months.
This can also be done with an 80 or 150 proof vodka, with slightly different subjective effects.

Its not the heat. Its something with it being extracted then dry in the air (probably oxidation)
People deep fry their shrooms with no issues

Interesting. I have not had that issue in my experience. If you're leery of oxidation, I would just do a 150 proof alcohol and evaporate down to 1:1 of 1 mL alcohol to 1g of shroom. Shouldn't be any concern of oxidation in solution. I just prefer hard candies over gelatin, I guess, and not a fan of weak tinctures.
Deep frying—tho technically involving hotter outside temperature—the inside of the mushroom does not actually get above boiling. If the internal temperature goes above 350F, I expect some thermal degradation.
