Dead, dry, or just right?

I am on my first grow about to be 2nd. I have 3 cakes that are in the fc for about a 10 days. 1 cake is producing other 2 nothing. How can I tell if they were too dry?
I just birthed 4 more jars. The cakes just fell out because of shrinkage. I can't tell if I made substrate to dry. I am not sure if you can kill the mycellium because they were to dry for to long. They are being dunked right now. I was told to use super cold icy water. Is that correct.
Any advice is appreciated.

The water temp doesn't matter, I use room temp.

Your cakes are dry if the surface looks dry - that's when you mist.
Overly dry cakes will be very light when you pick them up. If this happens set the cake on a saucer of water over night.
