What species fruits the best indoors compared to others? Does it taste just as good as outdoor?

Lions mane and pioppino are easy. Oysters are always easy. Especially the pinks

Oysters grow well for me indoors if they have good light. It is good to harvest them early so you do not find your room covered with a layer of white spores.

Also the yield with oysters is greatest of all. Because they're quick.

I would say shiitake. Especially a warm weather strain.
They can deal with lower humidity than oysters.

^^^ that is a good one.  Depending on your climate you might not even need to add humidity.

How well do you think they'd do in a climate around 23-30 C and humidity around 10% or less? The heat is what worries me most, since I can fix the humidity.

Shiitake will take about 4 months to get a harvest. Because of the long incubation time you will need a large incubation chamber.

For the above reason, I would go with a warm-weather oyster strain. The yellow or pink oyster would be good.
