How do i get my AA921 to run at 15 psi constantly?

So I've had a crappy PC in the past and finally upgraded to the 921.
Using it on an electric boiling ring inside. Its a standalone 2KW ring a caterer would use so gets up to temp and pressure fine. The thing is, after venting for 10 mins at full temp, number 6, I drop the weight on and wait until the weight rattles furiously then drop the temp down on the ring.
The problem is, on temp number 4 the weight rattles about constantly but on temp number 3 it drops pressure to 12 PSI and doesn't rattle.
I tried adding weight when on temp 4 so it doesn't rattle but after taping 4 coins it was still rattling loads on temp 4 and the pressure was up to 18 on the gauge!
Anybody experience this before?

Sounds like practice is the solution. Or if there's no setting between 3 and 4 like a continuous knob then a new hot plate.

Fixed setting 1-6 unfortunately.
Would there be any harm in adding more weight when on temp setting 4 if the pressure got up to say 19/20 PSI?
Next time I do a run I'll record and post a video.

Is there any harm in the fluctuating temperature and how long would i need to pc grain jars for. I usually do 90 mins at 15psi but as this spends half the time nearer 20psi could i reduce time to say 75 mins perhaps?

You could always tweak your weight. If you add some more, you might be able to run it on 3. Or if you take some away, you might be able to run it on 4.

If I was stuck with a hot-plate like yours I think I would cut the cord and add my own rheostat to it. That way you could just turn the plate up to max and use the rheostat to accurately adjust it to whatever is perfect temp.
Even cleaner would be to remove the 1-6 detented dial and install a new rheostat where the old dial was. That would depend on it fitting in there though.

There is no harm in pressure flucuations, as long as they are gradual and stay at or above 15 psi. You might be able to get away with a little less time at higher pressure, but why mess with it? Just keep the same time.
Adding weight to the rocker will increase pressure without the rocker rattling, but the pressure will be unpredictable. Constant adjustments need to be made IME.
Without weighing down the rocker, it is possible to maintain 15 psi precisly with a hot plate that has a built-in thermostat. With this setup I can confidently leave the PC unattended after coming up to pressure. Like I leave the house and shit. No worries.
If you are not willing to invest in a new hot plate, then I believe you are stuck with turning that knob from 3 to 4 to 3.

Thanks, i'm just going to stick with the 15-20psi for 90 minutes and turning it between 3 and 4 because the hot plate is like a catering one and it's really sturdy and it heats up to pressure quick, this temp issue is the only downside and i'd probably damage it if i started cutting things or taking them apart.
To be fair, whenever the PC is on I will be in the next room so all I have to do is get up every 15 minutes or so. which isn't really that bad. I'd probably be checking it that much any way if it worked normal.
