First time growing oyster mushrooms, some results

Hello everyone on the forum, I guess I could use this thread to quickly introduce myself. I'm from Serbia and I've always been interested in mushrooms, especially since I'd often find them while walking around in the nature, so after some time I wanted to try and grow my own. I decided to start with oysters as they seemed as most robust and easy to grow. I'd also like to thank a lot of people on this forum since I've lurked here for all the information I needed that helped me so far.
My setup is pretty basic, I made 6 straw logs in most ‚‚traditional'' way possible and had them hanged in small 2x2 grow room. I decided against heating and somewhat coldish spring did prolong spreading of mycelium but I wasn't too concerned about the timeframe needed to grow them as I mostly wish to grow them for myself. After logs got colonized I ended up cutting holes, raised humidity and turned on the fans to start the pining process. Today is 6th day and I attached the results below.

I'd appreciate if someone would leave a feedback, especially since I'm slightly confused at the looks of the mushrooms. Most I've seen grow a few in cluster and grow out to be big, while I ended up with a lot smaller ones in clusters. Another thing I noticed is that most people show pictures of oysters with caps that are twisted practically in the cones, yet they also say mushrooms should be harvested once the caps are almost flat. As for the shape my guess so far is that it's either a slightly different variety, or as I read somewhere it says that first flushes are usually like this.

they look great. You have nice fae. So, while if you are hungry they can be eaten now, but if you let them grow another day or two or three, you will see the caps get bigger. Honestly it will help you understand their look if you let them grow longer than picking them early. You may be excited by how they are now. But it's not the end of the world if the caps start to curl upwards because you missed it and picked a day late. And you said this is all for you and not to sell, so enjoy and watch how they look up to the point of their tippy tip edges start to curl upwards. Learn the growth stages well now, since you are not under pressure.

In my opinion, it is always better to let them grow longer on your 1st grow when you are new. But keep a close eye on them that way the second time you will know when to harvest.

I make one slice on the bottom of the bag from corner to corner. More slices = smaller mushrooms. Don't allow the bag to lift off the sub when you slice. If the bag lifts you will get pins in the bag. The reason I use the bottom of the bag is because that is where the bag is tightest against the sub. Any air gaps in the bag will produce pins in the bag so keep that bag tight.

But it shows how big they can get with only one slice. You want all the energy going into that one cluster. Not into a bunch of clusters. The top mushroom hides all of the other huge mushrooms under it.

What they said, and also it's your culture/strain that causes so many small mushrooms per cluster.  Blue oysters usually do that more than others, I can't tell but it looks like your strain is a blue one.

Play around with different cultures to find one that pops out fewer, bigger mushrooms per cluster.

Well, I let them sit for 2 more days and I ended up harvesting two biggest clumps, altho there is many more clumps on the way seeing as I have total of 6 straw logs fruiting at the moment. I ended up weighting the two and they're at 750g combined which I guess is decent enough. I plan on setting up a bit better growing room with a tent since I had some issues with humidity in this batch and will probably end up with 3-4 rows of bags each inoculated with 2 weeks inbetween to get myself a constant supply of mushrooms and not one bulk batch. I will also go as suggested, making one big slice at the bottom of the bag and see how much of a difference it will be. I did end up snapping two more photos of one of the clusters from front and the back to show you how it looks now, after 2 days.

With hanging straw logs , I would advise not cutting large slits in your bag. The large slit is good for growing sawdust blocks.:shrug:

It might have been unclear how the setup looks, I guess so I did end up taking a picture, albeit it was a bit dark since I took it at dusk.

As for the mushrooms themselves, I ended up cutting caps off and discarding stems and cut half of them and had them fryed with onions, added salt and sour cream at the very end (same way I prepare white button) and it was pretty good. It tasted good, texture was a bit better compared to buttons as well so that's a win. I also took biggest caps and breaded them and fried them together with breaded meat. In my opinion breaded oysters are much better and tastier, if I had to compare it I'd say it's like breaded zucchinis just tastier.
My only concern with this first batch I guess is that after cutting off stems I halved the total weight of the mushrooms, having some 380 grams of caps left after original 700 grams. Oh and here's a photo how caps looked like at the end.

For the most part I eat the stems. Sometimes they are a little tough. For home use I don't mind if they are a little chewy. Caps are the best , if fresh air is adequate you will get very little stem to worry about.

Earlier immature fruits will give less stem too.

I get very little stems but if you have a lot of stems you can always make mushroom jerky the chewiness makes the jerky better. But tear the mushrooms from the cap to the stem and you will use all of the mushrooms when making the jerky. Mushroom jerky makes a good healthy snack.

They look great!

I also had a cool environment (65F) and it took longer to get going, but they seem to like to fruit in that temperature.

I just finished out 4 blocks of blue-gray oysters that were grown from LC to rye to supplemented hardwood pellets. Two months of cooking everything I could think of with them - and it was great! (I kind of miss it already, and need to start the next batch). Sauteed on steaks and burgers, sauteed with onions and folded into scrambled eggs, and breaded/deep fried. I also made an oyster mushroom gravy I found a recipe for online - it was great on potatoes.

I kept the tougher part of the stems, dehydrated them, and powdered them in a food processor. I have the powder (flour, basically) in a container in the refrigerator. I saw recipes online using "mushroom flour" so I want to test it out. I think it will work well to thicken soups and gravy.

I think I'm going to research the jerky as mentioned above.
