Pressure cooker issue — are these jars toast ?
    #26627620 - 04/25/20 04:30 PM (3 years, 8 months ago)

Pressure cooking some jars, brought the PC to a boil without the gasket on — after about 5 min of full steam the overpressure plug was began releasing  steam... the air vent was clogged.

I took the heat off and let it sit for 40ish minutes now. If I were to remove the PC lid, clear the valve, and restart the process, would my rye be fine?

I’m thinking it’d be an issue as the quick transition form high heat / steamed jams going to essentially room temp in the span of 40 min or so, then being put to 15 psi would throw the moisture content of the rye off...

Time will tell I guess, I ended up trying it, I will check on the jars in the AM.

Just thinking that the jars going from  steamed in the PC at 200 degrees for 20ish minutes then rapidly coming to near room temperature so quickly probably dried the rye out big time, no?... kind of a buzzkill

at the very least i guess i learned to always clear the air valve before PCing
