Psilucybin extract help

I have read numerous threads now and simply don't get it: When making psilocybin extract the left over liquid must be suspended in alcohol? What do I do when I want to ingest it??? I just want to make a dropper bottle with distilled water and mushroom extract... NO ALCOHOL in the dropper bottle (the whole idea for me is to micro dose it in my coffee directly from the dropper bottle). What am I missing.

A drop of alcohol won’t be noticed much. You could dilute down to 35-40% alcohol with distilled water.
However... for microdosing purposes, I think you are on overkill mode.
A tenth of a gram is pretty easy to put into a capsule, and/or just toss it in you mouth and wash it down with your morning coffee.

A dropper bottle with water only (no alcohol) will degrade / get moldy within couple of days / weeks. No good idea.
The whole point of the alcohol is to make the solution sterile for long term storage. Spirits don't go bad because of alcohol. Water does, quickly.
What against ingesting alcohol? A few drops don't make you drunk lol. Any liquid medicine contains more alcohol.

Someone correct me if I’m wrong here, but I believe you need to keep the alcohol content of the extract at or above 12% by volume, in order to maintain the preservative properties of the alcohol, to stop the psilocybin and psilocin degrading.
I’ve just started my first extraction, in order to save a harvest of weak Mazatapec. Best I could get was 40% Vodka. I’ve used about 350ml with 27g powdered Mazatapec, in a Kilmer jar. Store in cool dark place for 6 weeks, shaking whenever I go past. (6 weeks because the alcohol is only 40%)
Then I’ve heard you can double extract with water, to get the water soluble chemicals. Could be wrong, but there’s nothing to lose, bear with me......
Filter out the alcohol and then boil the mushroom material in water for an hour. This is where it gets particularly clever. You know the volume of alcohol; mine will be at 40% though, remember. By mixing the alcohol with a volume of water, which is at 0% alcohol content, you can control the alcohol content of the final liquid. I’m going to aim for 25%. So using really easy numbers for argument’s sake, if I have 100ml alcohol at 40%, and want to end up with 25%, I need to add 62.5ml water.
Once all mixed together, you can then boil down further to give a final volume of tincture.
As my mushrooms are weak, I’m going to aim for 1ml of final liquid = 2g dried Mazatapec. I started with 27g dry so I’d want to end up with 13.5ml of tincture, where 1ml = 2g 
Nothing to lose folks, the Mazatapec were going in the bin.....

Nope, this is incorrect. Alcohol boils at a much lower temperature than water does. Around 150°F / 65°C the alcohol boils already and evapes away.
Once you can literally see a mixture of water and alcohol boiling, the alcohol is already all gone.
Reducing a mix of alc and water is not possible via heat.

Good spot, Pandemoon. Lazy English! Should have spelt it out, the final reduction is done with cool air blowing over the top of the flask.
