How many here have tried oxtail?
I had some for the first time a few weeks ago. Pretty freaking incredible. Best way I can describe it is...idk, beef short ribs except even better? When they say meat that falls off the bone -- when it's done, it literally falls off the bone. Like you can pick it up out of the pot and the meat will slide off the bone right then and there. It's so tender it's crazy. You can cut it with a butter knife. Or shoot you don't even need that. You can cut it with your fork like it's going through butter.
It's more of a delicacy down south (in the US) and caribbean islands such as Jamaica.
It's not hard to make. Just time consuming. Because it takes several hours of simmering. But just brown them on a pan, put them in a pot with a beef stock, toss in some seasonsings (onion powder, garlic, pepper, maybe some worcestershire sauce) and bring to a boil, then reduce to a steady simmer and let it sit for 3 hours.
Then you can make an awesome gravy for the meat like a lot of oxtail recipes call for by putting some browning oil, olive oil, flour and some of the stock from the pot the oxtail is in. Or some people just make a big oxtail stew. Pour over rice and it is just soooooooo good. You can also sauce them bbq style and toss them on the grill after to finish them off.

Now I love steak, but honestly, just my opinion but the oxtail I have had here recently is superior to really any steak I've probably ever had. And I'm a steak connoisseur of sorts that has tried just about everything, from prime grade to dry aged to American wagyu (although wagyu is pretty tough to beat; never have had real kobe beef though which is the pinnacle).
But damn it is good. It is starting to pick up as a somewhat trendy cut now, which is funny because once upon a time (like lobster & crab, Chilean sea bass, etc.) it used to be considered a trash cut. A throw away cut because nobody wanted the tail. Now it's around $10 a pound now.
Anyways it's pretty amazing -- if you're someone who is into fatty cuts like ribs then I think you'd almost assuredly LOVE oxtail.

I want to try it with a teriyaki bbq glaze , balsamic vinaigrette salad, and some asparagus with some ghee buttered shitake fungi and rice.

I literally bought some for the first time a few days ago and am figuring out the best way to make it. Stoked. Hopefully it turns out something like that picture OP - looks fantastic.
Do you guys think it would be a good/bad idea to pressure cook it to reduce the cooking time?

Yep -- haven't tried it myself but I saw a number of oxtail pressure cooker recipes out there. You can also use a slow cooker with reportedly amazing results -- although of course that would defeat the purpose of going for a reduced cook time 
But I saw some recipes where people would put the oxtail in the slow cooker, go to work, and then by the time they got home the meat was just melting off the bone and ready to go.

I'm not a huge fan of gamey meat, and I'm particularly sensitive to it, but I'll eat things like venison and bison if it's cooked in a way that minimizes any gaminess.
I just cooked beef shanks for the first time because it was the only thing I could find at the store following that initial bout of panic buying. What I did was brown them, then braise the fuck out of them in red wine and beef stock with herbs for like 4 hours. It was pretty good! I'd probably do ox tail similarly if I ended up trying it.

yep I agree with Envix -- not gamey at all, tastes just like beef ribs except even more tender
I had never really thought about trying oxtail -- not because I was apprehensive about it or anything but I just never saw it on any menus that I can remember, or even at the grocery store, but I kept seeing it pop up on cooking/food shows and those cooking it would always rave about it and say how underrated it was. So I decided to try it.
You can find them occasionally at regular grocery stores but I think more so at specialty butchers and markets.

i used to have a filipino girlfriend whos mom made amazing oxtail soup with ginger/jalapeno/star anise and a bunch of other shit i dont know. to date still my favorite dish i'll never get to try again

man it's tough when you get to try an incredible dish like that where you know you'll never have it that way again
but at least you got to have it before as opposed to never having tried it at all

Yes and instapots with the saute function work extra well since you can sear before pressure cooking. I pressure cook pot roasts, short ribs and other typical long cook tuff meat. It will reduce cooking time as you would expect but still plan 2 hrs. Also make sure to go light on the amount of liquid used, unlike cooking on a stove top all liquid is retained and a sizeable amount of liquid will be rendered from meat and veggies like onion. My first few pressure braises ended up being meat in soup and required reductions.
