What is the wholesale going rate for oyster/shiitake?

What is the average rate to charge private chefs and restaurants? And at what weight level does this price decrease? Using good quality fresh grown mushrooms.

I don't think you are looking for wholesale prices. Wholesale is for people selling thousands of pounds. And if you are growing thousands of pounds I think you are on the wrong site.
I remember earth angle mushrooms saying $3.60 an LB for shiitake I think or real close to $3.60. He made a video about it on youtube and gave the USDA site. I had a link to the correct page but it is not working anymore so that is why I gave you the link above.

Yea no where near that much. I just figure a lb of shiitake is $10-15 lions mane $15-20 and oyster $5-7. Per lb but im just going off what I seen out there I’m trying to figure out what model there is for me To go by unless I just have to build my own based off my spending +time+ expenses Not sure how private chefs operate either do they like to purchase in intervals? From different growers depending on timing? On a schedule like a restaurant ? What pricing do they get as opposed to farmers market and regular sales. I guess since starting out i will be playing the farmers market and maybe the social media and word of mouth angle

I don't grow shiitake but at the farmers market where I was selling b4 the shiitake hit the fan. A guy was asking $14 a lb if that helps. If I was selling shiitake at the farmers market I would ask $12 an LB. but like I said wholesale is a whole different story. You might want to reword your question and ask again.
