Beech are my absolute favorite, they're texture is very unique and flavor is delicious too. I like em in stir fry or asian-inspired dishes.
Enoki are awesome, like mushroomy spaghetti noodles, sauteed with some salt/pepper/maybe garlic powder if you want.
And there's always shiitake, not all that exotic but one of the best. Great with asian type dishes but not limited to those. I had some the other day with over-easy duck eggs, OMG that was delicious

I like Oysters quite a bit, put em on a steak or a pork chop and they are amazing, they are also good fried in some butter

It's a fun one, kinda tricky but so worth it! I'd like to see someone else trying it, been a while since I seen anyone give it a go... for sure post if you do

Where I live, we do a kind of what you could call stir fry with all kinds of mushrooms. Steps: Chop an onion, put it on a pan and stir it on low heat until it becomes transparent. Increase the heat, when it starts becoming slightly brown, add chopped mushrooms. Stir for 2-3 minutes, add an egg or two and stir again.
Add salt and pepper according to your taste.
