Having seen this reoccurring pattern of jars colonize, then as soon as they are done, this moisture forms? Is this normal or do I have a bacterial problem?

Have you shaken? If so and it colonized again grains should be fine, normally bacteria would stall the process out IME.

It does look slimely. Best option instead of going to sub is G2G them see if they take best case you have more spawn.

I've had that pattern of moisture build up, and when I invert my jars the moisture allows the myc block to slide around. I wouldn't worry about the moisture alone. I'm not sure if it's bacterial, but when opened, has smelled fine and I spawned to shoeboxes. These shoeboxes I just completed came from spawn jars that were damp just like that.

Jar looks fine OP.. spawn it. Even if it’s slightly bacterial, odds are it’ll fruit out fine for at least 1st flush.
Also, just because there’s water in your jar, it doesn’t automatically mean it’s bacterial. Yours looks like clear normal water.. probably happened because your myc created heat and moisture inside the jar and the temp outside was slightly lower causing condensation to occur. It’s when the water is cloudy or really excessive and creating stalling that you really need to worry

Thanks again for your help. In general the jars smell fine, but occasionally this happens, the water turns yellow. This can then cause weakness in the mycelium and the tub goes mouldy. On agar the culture looks fine though, so I am a bit stumped 🤔. Thanks all the same though!

Thanks Faht, I'd wondered about having water in colonized jars but they seem to always fruit just fine like you mentioned. Glad OP asked haha

Thanks again. Tempted to start again from spores, but never seen anything wrong on the dish? It’s mysterious... Things look great while colonising, but it just goes sweaty at the end. I used to get two or three flushes, but now it is just one before mould hits... 🤔

Better pic. Looks fine, but I see the plate is mostly overgrown, which can hide contams around the edges. So maybe try using them before they get there. Also, feel free to get your culture checked next time before you drop to grain, may help narrow the issues.
