Tray looks fine but smells weird ("sweet"), contam?

Hi everyone,
I have this 4 trays i prepared 5 days ago (colonized organic rice, coco coir, vermuculite and gypsum), they all look fine but one of them smell funny, kind of sweet, not the earthy smell i'm used to (this is the 5th time growing mushrooms).
This three look and smell ok: Tray 1

Tray 3 (a bit "delayed")

Tray 4 the one that smells weird

The sweet smell is usually a sign of contamination IME. Mine had that sort of sweet garbage smell at one point. I switched from bagged coir to the dry bricks and now do the 5 gallon bucket tek to prepare sub. I used to use autoclave bags in my AA 75X and had a 90%+ fail rate. What kind of coir do you use and what is your tek for sub prep?

I used dry brick coir. Mixed the same volume with verm and a tablespoon of gypsum. Put it in a clothe bag and to the pressure cooker for about 1hr and 15 min. Waited until cooled down, drained well (and by pressing with my hand to remove excess of water) and mixed 1:1 with the colonized rice.
I'm planning to put all of them to fruit, but i'm not sure about this tray...

I'm not going to say that your tek doesn't work, but I will say that it is different than any one that I have read. My knowledge is not nearly as advanced as many others on this site but I grow decent flushes and do it consistently if that means anything. There is such a thing as over sterilising your substrate. This will kill "good bacteria" in the sub that helps to fight off contams long enough for the mycelium to take hold. Here is my tek for sub. I didn't invent it but did fine tune it from others I have read.
-Spray 5 gallon bucket and lid with iso and wipe with paper towel. -Place 950g of dry coir in the bottom of bucket not broken up. (I use a 1/2 brick of the canna brand) -boil 3500ml of tap water and stir in 100g of gypsum once boiled -Pour water into bucket, put lid on loosely for 1 minute -add 500g of fine verm -Place lid on bucket and shake well, let it sit off the floor for 24hrs (I sit in on a foam mat so the cold doesnt come through from the floor)
Give it another shake before you open it up and good to go. The boiling water will pasteurise your substrate but not sterilise it. I think that may be your issue, overheating your substrate while prepping it. I have gone through the process of squeezing and refluffing and resqueezing sub to try and get it to field capacity. Using my method it comes out perfect for me every time with minimal effort. Less time messing with your sub = more time to play with your cultures.
I use seedling trays, lined with a garbage bag for my tubs and keep these in a greenhouse; built for the purpose. Trays and bags sprayed with iso. Whole work area and all tools sprayed and washed with iso. I wear gloves and a facemask. Work is done in front of a flow hood. I put 1 quart of sub for my 1st layer, a quart of popcorn spawn for my 2nd, a quart of sub for my 3rd, another quart of spawn for my 4th and a final quart of sub for my 5th layer. Cover with foil cleaned with iso on one side. Poke 6 small holes in the foil and cover with micropore tape.
You have your tek and I have mine, I'm not trying to knock your method or praise mine; just want to share what I have done and what has worked for me. Perhaps you can take a little from column A and a little from column B and come up with something better! If so please don't forget to share!
