Current trays/subs. Should I start misting? Trying to grasp fruiting conditions

These are my current subs, I am trying to understand fruiting/pinning triggers. The mycelium is breaking the surface on all of them. Should I start misting? Should I just let it be and wait?

I'm growing at very high altitude and the temps go from 70 during the day to 60 or lower at night

Substrate is straw and poo

Those last two look really healthy.

I have no idea about growing on straw, but I’d leave it alone a few more days and see if it starts to bead up on its own.

I'll do that, this is really new for me. I'm used to using coir and verm. I also am used to using an oven to pasteurize my subs. But my oven now doesn't have temperature control

I'm going to let them do their thing. I know they will fruit on their own but it's just really confusing with the temps I'm working with
