1st corned beef

So my corned beef has had 9 days in the brine. It's just under 4lbs and the smell is amazing. I'm thinking another 3 or 4 days then.... Cook as per usual or smoke? Other?

If you have a smoker then I suggest you make pastrami.  Your already 1/2 way their and the flavor is soo much better.

Sounds like a good idea. I'll check out some recipes now and see how to finish it as a pastrami. Cutting it in half now and smoking one piece so I have a comparison might be nice. The halfs will have a couple days brining the newly exposed surface. Should be good yeah?
