So the more time passes by the less I can seem to justify slaughtering animals for meat. I say that I don’t care but I can’t in good conscience say that anymore. I want to stop eating meat but I’m not sure where to start. I know that with leafy greens I can’t really stomach them well and eating them feels horrid, but I don’t want to eat animals anymore. Any advice?

Yes. Tempura, lots and lots of fungi and plant tempura. Easy to make, makes everything exquisitely delicious and if battered lightly is nice and healthy. Search engines will give you an easy recipe for it.
I’m sure a staunch vegetarian can tell you what’s up. But, I’m an omnivore.

Learning to make Indian food is probably a good place to start because you get nutritionally balanced recipes and actual flavor, instead of defaulting to just bread and kale.

I regret to say I am not a fan of mushrooms. I’ve only ever had them in meat or gravy that had meat but without that they taste...bleh.
Honestly my biggest hurdle was the taste factor as I had many failed attempts to try and enjoy salad. But now I’m beginning to realize that I can’t justify eating meat unless it’s for survival, and I can’t support factory farming anymore. I can’t lie to my heart any longer

Are you eating eggs?
Can't really go wrong with rice, there's so much you can do with it. I make like 10 different fried rice variations. Can add beans or some other stuff to make a complete protein, olive or coconut oil for fat.
Like Patrickkn said if you're into Indian food, they crush it for tasty veg options. You can do a lot with pasta and noodles and stuff. It can be tough getting the calories without being super carb heavy.
Honestly though a lot of vegetarian products aren't all that great for animals or the enivronment. Per calorie the amount of farmland and therefore destruction to animal habitats is massive. Not to mention all the animals killedn during machine harvests and when they're working the fields with tractors and such... and all the pesticides/fungicides etc used that are horrible for bees insects birds and animals, even organic farms often use a lot of toxic stuff.
Probably best to hit up local farmers markets and even try growing stuff yourself if possible. I eat meat but I'm trying to eat less of it, and will be getting a grass fed beef and pasture raised poultry/egg CSA from a local farm this year. Still killing animals, but the animals are treated pretty well and have a relatively chill life.

Lots of thing you can substitute or there are lots of meals that are well rounded and have nothing to do with meat at all.
The healthiest and best i ever felt was when i went vegetarian. After several years i am now back to eating locally sourced chicken and fish a few times a month. I like to eat meat only sparingly no pork or beef at all. The daily consumption of processed meat is partly contributing to the rise in cancer and heart disease.
So the point id like to make is there are alot more reasons to go veggie than just for the animals.

OP maybe you should kill the animals yourself? Get some bunnies, bask in the cuniculture. You get cute little bunnies to hold on to and then eventually you snap it's neck or pop a pellet in to it's brain, then pull it's skin off like a sock and toss it's innards in the compost heap to help feed the next litter of bunnies. Thus, the circle completes, coming ever closer to god and you experience nature in its purest form - unmitigated growth followed by short periods of the ultraviolence. Which is also cost effective and delicious

I Have To Eat Meat. I'm Not Down With Eating Ungodly Amounts Of Nuts & Lentils Everyday To Match The Same Amount Of Protein In A Steak Or A Couple Of Burgers.
I Eat A Balanced Diet Of Meat, Carbs, Fruits, & Veggies. I Don't Think It Is Healthy To Go To One Extreme, Or Another.
Think Of Your Diet As A Pie Chart, Each Section Is A Different Nutrient. Eat A Balanced Diet & All Of The Slices Are The Same, Which Means All Of The Essential Nutrients Are Being Delivered To The Body In The Correct Amounts.
However, Cut Out Some Of Those Sections & Go To One Extreme Or Another & You Lose Or Reduce Sections. So The Nutrients Aren't Being Delivered In The Correct Numbers. Which Means The Body Is Not Running & Working To It's Full Potential.
This Can Result In Lack Of Energy, Lack Of Sleep, Lack Of Focus & Drive, Low Testosterone Levels, Etc...

Edit: for my real reaponse: I'm with you. I CAN hunt but have chosen not to for ablong time now. I only eat meat from the store because I feel like NOT eating them is disrespectful to the animal. I'm at least going to give its life some meaning by taking in its energy to give back to the world.

Which mushrooms have you tried? Look ontonsome recipes for sauces with mushrooms in them to add to your vegetable based meala. Chicken of the woods prepared just like chicken cutlets can taste exactly like a chicken cutlet if you do it right. On the whole, just be open to trying lots of different and new things and im sure you'll find foods that work for you.

Okay, so I hate the word 'flexitarian', but I myself sort of align to that label, as I'm trying to reduce the amount of meat I eat, primarily for environmental reasons - but also ethical/anti-factory farming reasons. I don't think it's ethically wrong to be an omnivore, but my ability to stick my head in the sand about where my food comes from has been...decreasing, significantly.
It doesn't have to be all or nothing. More people eating less meat, is more impactful than fewer people eating no meat at all. That said, as far as recipes, now is a great time to get good at cooking if you're not already. Some of my favorite recipes are :
Anything falafel based. Salads, wraps, standalone. You can get a fairly easy to make mix at the store, but from scratch is obviously a whole different league in terms of taste.
Tofu! There is a wrong way and a right way to cook tofu, imo. It really needs to be drained, pressed, and dried as well as possible unless you're using it in soups - though there are some more forgiving recipes than others. I loove this Chipotle sofritas copy cat recipe. Great for burrito bowls, and burritos, great for zucchini boats too - which is a good and flexible option in and of itself(peppers, and eggplant are also good subsitutes). Honestly braised and spiced tofu is super versatile, there's tons of very easy recipes that don't require any gadgets or anything like that. Pan fried or better yet, oven baked or air fried tofu is awesome too.
Don't be afraid of soy and meatless alternatives in stores, a lot of them are really delicious - it's healthier and cheaper to try and make your own meatless alternatives, like veggie burgers and stuff.
Also, get familiar with seitan. Seitan is glorious. Seitan is super cheap, and super easily made with just a few ingredients. Here's a good tutorial to get you started :

Also one of my favorite simple veg recipes, is from my Grandma, she came over from Italy as a pre-teen, was born in 1930, and it's basically peasant food, but with some good tomato sauce it's really good.

I am not sure if this is the "right thing" but I don't feel good about hurting animals anymore. Some people aren't bothered by it but I am not one of those.

Make veggie burgers. They are delicious. Also a lot of Italian dishes are veggie-friendly. Japanese Ramens/Miso Soup is also delicious.

Indian food and honestly any spice heavy cuisine is great and will blow your mind when it comes to vegetarian cuisine.
I would suggest ordering a few different spice blends like Garam Masala from Indian Markets/stores.

Miso is delicious, so I'll try that. Honestly it would be healthier than my current diet, and I'd feel a little bit better about not eating the animals I so love.

Well I actually love insects. My patio is crammed with spiders than have taken up residence in there and I don't want to chase them out. I also take great care not to disturb spider webs outside my home.

I couldn't squish one but I find myself in a bind during the occasional infestation. I love it but also I know roaches carry a lot of "filth" due to where they travel.

They are nasty. I've spent most of my adult life living in large, dense cities, and they crawl up out of the sewers there at night, and you've got to dodge them on the sidewalks. They're in every building that's even remotely close to a downtown area too.

Props for going vegetarian. I'm getting closer, but I'm not there just yet. It's haaaaard. Just remember, it's all about reducing your meat consumption. So even if you eat meat one or two days a week, at least you're helping a bit. As time goes on, you can work toward 7 days per week. So don't give up, if you slip. It's not all or nothing.

Not sure if you're joking or not, but reducing the demand for meat reduces the amount of animals that will be killed in the future. It's the same reason you'd go to jail if you possessed kiddy porn. The lower the demand, the lower the supply.

I'll start by eating less meat, then look into the cooking stuff people recommended.
