With all this hysteria going around I'm considering starting an insect farm for an alternative food source. crickets only take a few weeks to breed and a couple more to hatch. captivity seems very simple. is there anybody else out there who has experience with this type of cooking? also interested in other peoples alternative eating routines/diets.

I don't have any experience, just lots and lots of interest. Depending on where you are (specifically, what poisons your neighbors/local government indiscriminately spray), you can also forage for insects.
For ideas, check out
Watching it made me legit hungry for bugs, & it was on netflix last I checked.

At a temp job one time, a Mexican lady once offered me a fried cricket. I ate it, it was OK i guess. The flavoring definitely helped. The texture, not so fun 
But they are edible snacks

So a weird coincidence gf father couldn’t get crickets for his boys lizard so a box of aprox.250 crickets were ordered and are at the house now so I think while Quarantined I’m going to try and grow a few generations, might be fun experience.
I’d guess they have a funky taste and it’d have to be improved with spices I remember watching bear grills try and eat bugs and grubs and his face was always priceless. I haven’t looked up recipes curious to see where this’ll go.
Didn’t watch video yet will do though momentarily.

Oh weird! 2020 synchronicities 
As for spices, i would try for semi-spicy, Mexican type spices myself if i tried it. I remember watching an episode of Andrew Zimmerman's Bizarre Foods in Thailand and i remember them cooking crickets in a big Wok over a fire. So Thai spices would work well too

The taste of insects also really depends on what they eat. If they’re raised industrially & fed a diet of dog food & cardboard, that’s what they’ll taste like. If they’re free ranged on herbs & greens, they’ll taste much better.

Been looking at pigs lately and have been getting a lot of feedback that they’re the same way. Good meat comes from well fed animals. Specifically speaking of those pigs from Italy that only eat truffles and nuts and they go for large prices. I Bought a bunch of ladybugs for a spider mite problem and apparently where I was operating has a large ladybug pop. Increase. Sure the neighbors would love cricket flux.

toast the crickets and grind them into a meal. use just like corn meal
seen cricket chips for sale at fred kroger
brand is called eat bugs (i think)
