new to gourmets- a few questions

hey all!!
i was looking into trying out king oysters & lions mane mushrooms. however, i don’t think i can use bags, as my pressure cooker is small & i only have an SAB. i’ve seen that people have grown them both in jars before, but i haven’t seen much in the way of teks on it. so would i just grow an agar wedge out, transfer that to a quart of grain & then case the jar w coir? or is there more to it? i’ve seen mention of using PF tek to grow lions mane & oysters as well... is that a better route for jars than grain?
also, would they grow on whole oats? that would be mighty convenient considering i have about 70lbs of the stuff ...
thanks for any and all help, gourmets are way more confusing for me than cubes are for whatever reason lol

whole oats are awesome grain spawn for Gourmet Mushrooms. And cheaper than other grains too.. A lot of cultivators, professional and hobby growers use Whole oats exclusively.. 
I can fit 2 or 3 5-6lb. bags in a presto 16 quart PC depending on my substrate medium. Master's Mix fluffs up more so I can only get 2 in there for example. SABs with bag height could be an issue. But I think hobby growers have done it. Not me I have a HEPA now..
And forget about coir and casing for Gourmets. Gourmets and actives are grown largely different. Albeit similar as mushroom growing is similar. Drop an agar wedge in your oats jar or bag. Let it grow. Lion's mane myc is thin and wispy. So you may not even realize its fully colonized. Go by time 10-14 days. Then spawn your grain to bulk sub. I haven't grown Kings yet, but I have grown Lion's mane.. Your best sub is 50/50 HWFP/SHFP aka Master's Mix. No casing.

awesome, i’m glad oats will work!!
i guess this is where it gets tricky, as i only have a 6qt (MIGHT be an 8 i forget) PC, so idk what size bag i would use. also the issue w using an SAB, but if they get spawned to bulk anyways i don’t care about using jars.
when you say “spawn to bulk,” do you mean growing it like cube bulk grows in a mono tub? if i could do that, that would be awesome

Double up the tub on your still airbox to make it taller. Just place the open ends of the 2 tubs together.

Do yourself a favor spend the money on a 23 quart presto. You are stuck now you have started growing. No one ever leaves this hobby alive. Once you start growing mushrooms you never stop!!

I’ll second that. Double up your SAB so you have enough headroom to work with mycobags. They come in a few sizes. 14A is a good size and will hold 5-7lbs of substrate. Make oat spawn then spawn that to sawdust, wood chips or straw supplemented with bran. Substrate will differ depending on the species. Also if you aren’t comfortable working with agar yet you’ll want to get started. Gourmet and medicinals are generally grown from a culture vs spore, so you’ll need to be able work with them and keep them alive.
Definitely think about getting a larger pressure cooker. A 23 quart presto will work well and will fit x4 5lb bags at a time. You’ll most definitely get good use out of it... this hobby only gets... worse . In the meantime you may be able to grow some gourmets using your 8qt using a bottle tek, but you won’t get very good yields.

i'm good with agar! i'm decent at growing cubes, gourmets just seem like a completely different ballgame to me for whatever reason. was trying to find a good starting point
so size 14A bags are what i should get for my current pressure cooker? or would i only be able to do bottle teks with my current? i'm fine fruiting from bottle, idc about yields rn i just want to get familiar w it all before i dive in. i just haven't found enough info on bottle fruiting to figure out what exactly i need to do
i know i know ... the answer is always buy a bigger PC lol. i would love to, i just don't need one for cubes rn & want to see what growing gourmets are all about before i dump money into that inevitable sinkhole lol.
btw i really appreciate all these replies. i'd love to branch out into gourmet & medicinal mushrooms if i can!

If you plan to grow on HWFP, you can look into Lipa tek. Seems to work fine with Lions mane, not sure how well king oyster does. Easy and you don't need anything else for it.

14A bags are only going to work if you have a larger pressure cooker. You may be able to do one 5lb at a time in your current PC. I would say look at using PP5 containers for your bottles like the ZipLoc Twist n Loc containers. I don’t really know how many would fit in your PC so you may have to get a few different sizes to play around with.
The other thing you can do is grow oysters on pasteurized straw. Then you don’t have to worry about PCing your fruiting substrate. You’d just be using your PC to make spawn. Look up how to pasteurize straw. That’s what I did in the blue oyster grow I have linked in my signature.

No, you don't want monotubs or shoeboxes for Gourmets. They won't get enough FAE that a majority of Gourmets demand. And Lion's Mane is a FAE hog. Spawn to bulk, like Master's Mix in a bag or straw in a bucket or bag of some sort. Or log. Big surfaces that oysters can spawn from like a monotub would have or a laundry basket will reduce your yields as well. Which is why we grow out of small holes.

You can always buy the 14a bags and just fill the bag to where it will fit in your pressure cooker.

This is where I get my bags too. If you're okay with doing one bag at a time then that would be the way to go.

He really does not have much of a choice. With his PC The most volume of sub he will be able to get in it at one time will be in a bag.
I just thought I would mention making sure you place something on top of the bag to keep the bag from covering the steam release ports on the PC. If these ports get clogged you no longer have a PC you have a bomb!!

i'm totally cool w doing one bag at a time. just looking to get my feet wet!!
so just to make sure i have this right ....
i'll put lions mane/oyster culture to agar. take some transfers to get clean mycelium
put that agar to jars of oats. they'll colonize for however long they need to
i'll sterilize some hardwood spawn in the bag (being sure to not create a bomb!)
i'll dump the jars into grain bags using a ridiculously big SAB
i'll let those bags colonize & then cut holes for them to fruit in
am i missing anything? will i need a SGFC or anything to put the spawn bags in?

no SGFC.. you would basically suffocate the Oysters or Lion's Man in there, just like a monotub or shoebox would suffocate them as well. A small martha would be helpful to control spore load and the environment. Although you can fruit the bag on your kitchen table with just a spray bottle and make sure you pick it before it drops spore.

Yup... You pretty much nailed it. The FC needs more FAE than cubes. I use a large tent with an ultra sonic and a fan that pushes air out to provided fresh air for FAE. You could use a "Martha" like setup with good results.
