truffle how long to mature

I have have been having bad luck fruiting. The sensor for my heating pad fell out of the chamber and i cooked them. (two batches) The second time i passed it thru the drain hole in a cooler but it got pulled out when someone was cleaning up and tried to rearrange the shelf. (not me)
actually i got a small flush off of the second batch so not all of it was killed.
anyhow my wife recently got a long term supply and i decided to try truffles. no fruiting needed.
i was reading on a site from Holland that they found that if they let the truffles grow longer (up to a year) that they lost some of the bitter taste
since we have a good supply i have some time.
so
any reason to grow past the 4 month mark?
does it improve taste?
i am growing in quart jars of popcorn to give them room to form the stones. Not sure if it is a good idea
i may save half of the spores just in case.
-------------------- New to this growing for my wife’s microdose depression and MS but think of me as your 65 year old grandfather forced retirement (that is fixed income) was a mechanical engineer, last 15 years as Cyber Security Engineer. a benign brain tumor and radiation to it finish it off forced the retirement so.... memory problems (thus not working) and it blew my balance so when it is bad I walk like a drunk and have almost constant sea sick feeling BUT looking at the green side of the grass

I haven't noticed a difference in taste relating to time grown. They always taste nasty whatever you do. But they do get more potent the longer you leave them in my opinion.

so how long would you recommend. i have 8-9 before she needs more.
and
a y danger of longer time from contamination, or by the time it is fully colonized it is pretty safe?

I’m pretty sure somebody found a jar of stones that was like five years old recently.
Said they were crazy potent.
If you can get them to fruit you’ll get shrooms along with the truffles and the shrooms are something like twice as strong as cubes.

The longest I've left any is about 8 months, I normally do 4-6 but only because I wanted them. I don't see a reason to harvest early unless you're ready to use them.

it also sounds like it could be a way to safely store them instead of drying them.
