How much exhaust and heat you need depends on your space, it won't be that hard to do. Gonna have to test it ultimately, - I used a bag of apples cut up before drying cubes (throw a lot of banana on there too.. for testing purposes). For similar dimentions I used 2 1500w heaters, from the bottom, and a boxfan on low in the middle.
The exhaust is passive (think of a traditional common dehydrator). Anything above 100 will work, definitely no need to go above 160.
Also something to note, mine was located in an open air garage, in the winter and fall it worked fine but with the high humidity of summer I had to invest in another Cabela's because the fans where blowing air in with such a water content the mushrooms had no way to dry. Barring the high humidity environment sinario it worked well.

Heres a little tip no matter what kind of dehydrator you have. Buy window screen and cut to put on your racks. Works great

Also I looked in the user manual for the Cabelas 160L dehydrator and it says it has a 1 year limited warranty

The downside is its made by westin and they do not service them and won't sell you parts after the warranty but if you can get a couple years and a few hundred pounds it's paid for itself

That's what I figure also. Like all the equipment in this work if your success percentage is 99% it doesn't matter how much you spend cause a few tubs will pay for it instantly. Just take life one tub at a time lol

Yeah exactly like a clothes dryer.
Seems like you could do a ton at once evenly.
Although even with a 55gallon drum you prob couldn’t fit as much as some of these home made of industrial ones.

I bought one of my big dehydrators used from a local craft beef jerky maker. He had traded up to one of these bad boys. I gave him my card and told him if he ever gets out of the game to hit me up. This is what you want!
