Ratios and proportions for a shoebox

Hey everyone,
I have 7 WBS jars that just finished up colonization and I'm trying to put them into shoeboxes, but it is my first time doing this and I want to make sure I got everything right before I hop fully into it.
I was planning on doing a ratio of 50/25/25 with cpoo/coir/verm in a 6 quart shoebox. I have read that you dont really need the shit to grow cubes (I am growing golden teachers), but I bought it a while ago and it's just gonna sit around so why not. I was also going to use 2 quarts of substrate and 1 quart of spawn per shoebox. Are these acceptable ratios?
I'm not trying to waste a lot of coir, but everything I have read just says throw the whole the entire brick in some water to let it hydrate. The brick I have is 11 pounds and too large to fit in a 5 gallon bucket anyway. Is there a guide as to how much dry coir to hydrate in order to get a specific amount of hydrated coir out of it?
One last question I had is about the process of mixing substrate and spawn in the shoebox. For pasteurization I planned on mixing all my elements together and stuffing it in jars to simmer in a pot of water. When that is done is it cool to just expose the sub and spawn to open air while mixing? And you just leave the lid on top but flipped upside down after that right? I feel like this would let contams in or can it fight them off at this point I'm a bit confused?

If its your first grow then don't use the cow shit, just use the recipe from bucket tek. You won't have to worry too much about perfect pasteurization either because youre not using any manure that is breeding ground for other stuff thats not mycelium. Coir/Verm contaminates less. For one box I use 150g coir, 0,5l verm, 1,1-1,2l water. More or less the recipe scaled down.

Roughly 5 parts water for 1 part coir by weight (as per Bod's coir tek), but there's variance in coir capacity so you have to squeeze it to test it after it's hydrated. A few drops of water should come out when you squeeze hard. If you get a stream, you need to add more coir or vermiculite, or squeeze out every damn handful you use.
It's normal to mix substrate/spawn in open air. The bulk substrate isn't very nutritious, normally, so it's not very susceptible to contamination, and already colonised grains are also hard for contaminant to get started on.
You're using poo though, which I gather is far more contam friendly than just coir and/or vermiculite. I don't know what steps people use to keep their poo clean. Wishful thinking I guess.
