First oyster bucket, few questions

Doing my first oyster grow, i did it in a homedepot bucket with holes all around. Few questions, should i mist the holes indirectly as you would mist cubes?
And when i filled the bucket i didnt get it completely top full, and some nutritious water from the straw got all over the sides of the remaining exposed bucket. The myc is now just climbing the side of the bucket, not a problem but does the myc need to finish colonizing all that delicious bucket before it fruits? or will it fruit in time. More or less, with cubes on clean spawn, it will not fruit untill its full colenization. Is this the same with oysters?
Last question unrelated, do people grow shiitake solely on blocks or do you guys do bulk monotub type setups? I have no experience with grow bags but im interested to try it, dont know where to start though.

If your bucket is not in a humidified room you can set the bucket on a plastic bag and mist the bag. Not filling the bucket is a problem. The straw should be compacted so the mycelium can travel easily.
The bucket will not fruit until it is fully colonized unless it is contaminated.
Shiitake will not do well in a monotub.
If you want to start with grow bags you will need hardwood fuel pellets and bran or preferably soy hulls.

Then you weigh out on a scale and dry bag your ingredients Pick one. Soy Hulls are Better if you can find them...

The flow meter makes it nice, quick and easy. You can also use a scale to weigh out your water after you figure out how much water you need for your brand of fuel pellets. They all have different water content.
Once the water is in the bag let it sit for a few minutes to absorb the water. Fold the bag properly and place it in the PC or steamer.
The ingredients get mixed up when you spawn. Because you have to mix the spawn with the ingredients. There is no need to mix the ingredients prior to this step.
Now back to water content. You want 60% water content. To figure out water content use this...
You will think your sub is dry but it will not be dry. So make sure you keep drying it until the scale stops showing a different weight.
Make sure you write down the weight and the liter amount of the water. That way if you have to go to the other one, you will have the info readily available.

The oysters will be fine pretty much no matter what. They will fruit off your finger nail clippings if given the option. Just wait longer. When they start pinning maybe give them a mist here and there.
As for shiitake they are slow as shit. If it was me and just for personal use I'd inoculate logs and stick them in the shade. They will grow mushrooms for years to come. There's a lot of places that sell ready to go plug spawn. Or you can order a culture and make it yourself. Good cultures are expensive though. Cheaper to order the plug spawn and maybe culture a little mycelium off one of the plugs if you have the means. Save it for next time.

Thanks guys, I’ve heard shiitake won’t grow on soy bean hills or “masters mix” can’t get a reason why or anything just seeing you aren’t supposed to. And If I did bags is a sealer required (assuming my grain spawn is still done in jars)

I personally tried shiitake on masters mix. It colonized beautifully but wouldn't fruit. (same exact thing with reishi if you're wondering)
You can twist the top of bags and put a zip tie on it. Works just fine. Sealers are awesome though. Just be sure to get one with at least a 5mm seal or youll regret it

so subsitute it with something other than soy bean hulls, or just go full on wood pellets?
if im doing bags would pressure cooking be the way to go for the sub? i dont have a setup for steaming bags for like 15 hours right now lol, and its only for personal use, so i could probably fit a decent amount in the presto 23q

For oysters go half sawdust half soybean hull. Pressure cooking the substrate is ideal. People use steamers not because they're better but because we can build big homemade steamers easily

You can fit 6 5lb bags of HWFP/WheatBran in a presto 23 qt PC @2hours or 4 bags of Master's Mix @ 3 Hours.

I use releasable cable ties. That way you don't have to keep buying ties. You can even PC them. But no need to put a tie on your sub bags. Just fold them properly and they will seal when they cool.
