Easiest Gourmet/Medicinal/Other Mushroom for Beginner?

Hi! New here. I like gardening and I have always been interested in fungi of any kind and how it grows.
I want to get my feet wet. I don't care about the end result, I just want to immerse myself in the growing process.
So, which one do you think is the most satisfying?

Prolly oyster would be easiest, can literally grow em in a laundry basket with straw and get a whole bunch. Could most likely even walk around some woods in your area and find wild specimens. Another good addition to gardens is stropharia rugosoannulata also known as the garden giant or king stropharia.
If you can get some spawn going you'll be able to inoculate wood chip mulch in your garden to the benefit of the plants as well as you.

Way easier to just clone it to agar. I've got some good culture results doing that.

Though I've done it with mushrooms from reputable and relatively local growers. Probably best to not start culturing shit from China right now.

I'm having issues finding spores where I am at the moment (UK). Most sellers are out of stock or closed because of the virus, and the ones that aren't don't look reliable.
Can you clone grocery store ones to agar?

Yes. you can clone to agar from the grocery... also Lion's Mane is a good beginner mushroom imo too

I dont know UK mushroom hunting very well but its beginning to be prime mushroom hunting here in the pacific north west. I bet with a little persistence you could find oysters growing in the wild right about now.
they are an easy mushrooms to identify. find them on dead or dying hardwood. gills run down the stem, stem is usually small and off to one side. usually grow in clusters. White spore print.

Maybe you have missed the news lately but: There have been a lot of regular people from China coming forward about the real death count from Covid-19 compared to what the Chinese government is releasing to the world and I forget the exact percentage disparity but it something about a 3,000 - 40,000 difference.. Yes. I wasn't suggesting that covid will end up spawning on your plate. But Im going to stick to local (ish) stuff for now. For a number of reasons.

Not specifically, but considering what I pointed out and that they know Covid-19 stays alive on plastic for up to around 72 hours and cardboard for 24.. and they detected Covid -19 on one of those cruise ships after it was docked and evacuated and all that after 17 or 19 days... so if after all that you feel comfortable ordering stuff shipped from an epicenter right now.. we are still learning about this thing..

I was basically making the argument of garbage in, garbage out. If I can go look at a nice fresh uncut, unprocessed specimen that was likely growing on a substrate just the day before, i will feel better about the biopsy being taken vs. something pulled out of a musty container labelled Mushroom Joes Mushmix or some shit.
