Kinugasa?
    #2656449 - 05/09/04 01:07 PM (12 years, 10 months ago)

Hi,
Last night on an Iron Chef repeat, there was a dried abalone and Kinugasa mushroom soup. I did a google search and found very little about them, but I did read that they are similar to Morels. They were whitish and were compact and net-like. I suppose the part they used could be compared to the pitted cap of a morel. The pits were more like nets, almost like the stem of a netted stinkhorn. Sorry for the vague details, but perhpas someone knows something about this mushroom.

Hmmm, I couldn't find much information on them either... medicinal qualities, etc...

But check out this great recipe!
Sounds delicious, no? : )

mmmm. sure does. in the picture, the mushroom actually looks sort of like a dried stinkhorn! Those crazy japanese with their strange ingredients, and gram/CC measurement system.

Dictyophora indusiata? (basket stinkhorn)... said to be most edible in the egg stage... prized in tropical regions for its beauty... some tropical regions use it as an aphrodisiac... obviously u saw it used in cooking...

I think you might be right, Dalton. I was actually comparing it to the mesh-like stem of dictyophora duplicata (in Lincoff's book), but the picture doesn't show the weird net thing surrounding the entire fruiting body that some of the online pictures have! Reading his description, though, I think duplicata and industrias may be the same thing. Thanks!
