king oyster too much pins

please help guys
does anyone knows what causes this? I have this every time when I grow kings.
Meanwile my chefs love this babies but I don't want it anymore. it takes ours to harvest. .. but the bigger problem is the low yield... or better the amount of "lump of mycelium" which I have to throw away.

I have next to no experience with growing kings apart from cloning a store bought one. But I recall watchin a video from a mushroom farm that did bottle cultures and they would prune back the unwanted pins so only 1 or two would grow. You could try to limit the surface area exposed to FAE and prune back unwanted pins.

Scratch the myc surface with à fork before you put it into fruiting. Remove all the aireal mycélium. Don't be too gentil with the fork! The myc wil recover and you'll have less pins. Another way is to put à layer of vermiculite on it.

I tried this (foto above) - remove pins on a block - just to see what happens. But it was a little to late and if I want to do this every time I should remove the pins wich grow on the edge. This makes a mess. My floor is raw concrete, no drain... and to do this on 60 blocks or more... but soon i see no other option and will have to do it.
When its time to put the blocks in the fruitingroom I massage the block at the top very well. I got this tip from a big breeder. After the massage the mycelium is flat, distroyed. You can see the sawdust ... it is brown, no more white. Is that the mistake? I also have to massage down the mycelium which grow up the plastic ... if I don't do this, the pins grow at this shred / rag. What is the sense to scratch with a fork? The mushrooms should grow there where the fork made tracks? And there where the fork wasn't - where the mycelium is intact - there grow no pins? ....There are already pins when I start the massage. Shoul I scratch so hard, tear the chunk off the substrate? I'm going crazy!

A top layer? No. Bevore I have to do that ... I don't cultivate them anymore.

prune them to get the best results. a lot of those will abort if you don't.

Looks like you're picking them a bit early. I think they would have gotten quite a bit bigger.
A couple other things. Are you waiting until they pin to cut off the top of the bag? I've noticed if I do that I get more pins with smaller mushrooms. As you said the chefs very much prefer this for presentation so it's not all bad. I actually try to keep my bigger ones separate for the farmers market and save the little ones for the chef. I know you want to maximize yeild but if chef is happy we doing our job 
Also maybe when you cut off the top of the bag cut it and leave about 2 inches of bag sticking above the substrate.
See how the bag is cut? Try that and see if it helps

yes I pick them early. better than too late. Maybe too early. shit.
I cut off the sack around about after 7 days stay in the fruitingroom. Up to here the sack is completely closed. After the 7 days the biggest pins are about an inch tall.
How do you proceder the "fruiting-thing"? Do you scratch? Do you rise up the temperature after the pins appeared? When do you cut off the sack? Do you do a secound flush?

The strain is not the problem. Genetic is fresh and healty. My spawn deliverer said origin Korea.

During my evening harvest, I took care of the ripeness of the mushrooms.
ripeness is good in my opinion.

ripeness is good. this size would be great for me.

this block I harvested yesterday. the rest of the mushrooms are for nothing. abort. why? because they "hang together" like pleurotus ostreatus

I really think you're just picking them too early. Those arent fully formed fruits. If you want bigger mushrooms let them grow longer.
I dont scratch the surface or any of that silliness. I wait until I see pins in the bag and cut the top off
