Sterilization

Now I know how pasteurization works. I know how sterilization works. I understand that the goal is time at temp to kill microbes. My question is why can we not sterilize with an oven.
Say for example you set you oven at 310f and that lets your grain reach 275 internal temp in your jar. Wouldn't a 2 hour hold at that temp be effective at killing microbes?.

Reason: Your grain wont get above 212F in an oven. Water doesn't go above 212F at atmospheric pressure it just boils more rapidly or less rapidly. Until you completely dry your grains out their temperature will be at or under 212F.
Air also conveys heat thousands of times less efficiently than steam. Steam is thousands of times more powerful at the same temperature. Think about it like a person walking 5mph and a train moving 5mph. The steam is the train and the person walking is your oven.
It takes 8 hours at 212F to sterilize grain but you'd be totally dried out by then and use a shitload of energy.

I disagree. You could weld all the seams in your oven and attach a bolt flange for the door so that it all holds ~15psi, leak test it then install a float valve and plumb some water to an inlet to supply water to the oven floor element and vent to a nipple that will accept a proper weight rocker. Then you could totally use an oven to sterilize.

Sterilzing petri dishes is not the same as sterilizing grain. They are not equal.
And you didn't read that second thread you posted. Because RR stated:

That's exactly what I intended to portray, wildernessjunkie. I am in total agreement. The OP didn't specifically mention grains, so I mentioned Petri dishes. And the grain thread was a joke, which I thought was clear because of link provided. This is another example of text not conveying tone, argh!

I am truly stupid and should have added I was speaking of pf cakes not specifically grains. In a sealed jar only a few filter. I thought since steaming is enough in most cases maybe baking would be effective as well. I mean obviously some work would be needed to keep the cakes at field capacity.

Just use a pc... or waste time and learn the hard way
What bod said applies either way. It won't go over 212 till it's totally dry, unless it's under pressure
