Been building a grow now for just over a month. Finally starting to come around.
Growing king trumpet, blue and italian oyster, shitake, lions mane, white button, reishi, beech, pompino, hen and a few more.
Main grow tent is 20x10. 10x10 clean room and 2 -10x14 colonizing tents.
We figure we will get about 1500-2000 lbs a month.
Finally seeing our first pins starting. Will get some pics up as well.
Woodlover strains we do 15% bran/85% oak Oysters we do 80% straw/ 20% coir As well as calcium and other inert nutrients.
We do 6-8lb bags depending on the strain.
We just got our main room humidified with a sweet ultrasonic plate.
Will add some more pics soon once i figure out how lol
I will also fill in more info when I get to a pc.

In the pic of the bags on the shelve we recently installed 2 more shelves in that main tent. Can fit about 600 total bags in there to fruit.

Whoa!!!! That's awesome. You put my two king oyster jars to shame. Good on you.
That's an amazing achievement for a month's work. But out of curiosity how long did it take you all up to put it together, from planning to where you are now?

Its my first time trying beech so trying a few different methods. So far they seem to be very slow colonizers. Have you done any beech?

I want to start growing them but I am not sure what the proper tek is. I am thinking they may grow like oysters but I can totally be wrong!

Heres more pics from the set up.

Heres our sweet bagging table. You clamp on a bag under the shoot and simply fill bags

Heres the humidifier. Just missing one step for the water air filter.

That is awesome! I am just wondering why there is no room on top of the bags for the mushrooms to grow? Or is there more room than there appears to be in between the shelves?

We fruit them from the side of the bag after cutting a hole in them. In the pics you see the colonizing shelve. The fruiting shelve has a good 12" of room to let those babies grow

For top fruiting species we have about 14" clearance on other svelves not shown in pics. Or top shelves where theres more room if the others are full.

Ok, that makes sense. I just assumed it was a fruiting shelf. It looks like you got a nice amount of fog in there. I did not have any luck with the pond foggers. I went through two 9 disk foggers in 6 months then I just built a high-pressure mister from a pressure washer. Anyway looks like you are on your way!! good luck.

Adding some pics of our bulk sterilizing set up
The boiler is ran on a 6500w heating coil. Then runs to the 3 drums. We can do 81- 5lb bags at a time with this badboy all full.

Of course the drums have shelves and insulated covers when we run it. Been getting 7psi without issue. Takes about 3-4 hours to get up to heat fully loaded with 27 -5 pound bags of substrate in each drum

Planned it out myself. It runs like a dream. The copper is insulated now as it helps keep it hotter. After turning it off it takes about 36 hours to cool down naturally.

The lids have high temp gasket in the linings to form a perfect seal. The clamps are custom built and really hold the lids on super tight (bolted and spot welded). We tested it out and it can hold 17psi. But really you dont need that high if you just run it longer. We do about 7-8 psi for 10-12 hours and have had great success so far.

I have. They are extremely difficult to get enough of a yield to make it worth it. I did not get as far as trying heavy supplementation, but I think that would be the next step...
My only tip is getting them to start pinning has something to do with temperature (cold). But it's not as simple as an overnight cold shock, like you'd do with kings.
Good luck, and awesome setup
Here's a couple pics of my attempts at beech

Very nice, I'm guessing you're having no problem finding customers if you're starting at that scale. I'm shooting for 10 lbs a week and I just introduced my first batch to fruiting conditions.

We have a few markets we sell at. We also have a booth set up at the farm we sell direct to customers. Luckily its on a pretty busy road. Any left we eat, which we love them. We will get some more restaurants on board when this virus stuff lets up also.
