My mom used to dehydrate bananas and apples all the time, the trick to them not getting all brown was to cover them in a bit of lime juice, I'm sure any citric would work though. They taste like childhood! Add a little cinnamon to the apples and I'm in heaven!

I make jerky and dry chillies and mangoes and stuff all the time with my dehydrator. Gets far more use for that than anything else.

I tried to dip my banana slices and lime juice and dehydrate them and they still didn't come out right. I didn't know what trick I was missing there.

They should slightly brown, but not much. Maybe try using more? Or use a lemon? If it was bottled juice maybe that was the issue.

Nope. I just marinade for 24 hours beforehand, cut all my strips across the grain and make sure there's no fat. Fresh home made jerky is amazing.

In my marinade I put:
Soy sauce Balsamic vinegar Barbeque sauce Paprika Crushed coriander seed Chilli flakes Salt Pepper
Simple stuff but tastes great.

The bbq sauce is a slack way to add a bit of sweet and smokey flavours, not something I'd normally eat either. I know it seems out of place in the list but there's method in the madness. I've done it without as well with great results. I've also put sriracha and tobasco in before, and numerous other peppers and spices in differing amounts. Let your inner carnivore run wild.

I saw jerky made with coconut aminos once, never tried it though
