slushy snow - is it myc or a mutant cobweb?

Hi, long time lurker, only have now joined because I am driving myself crazy thinking about what is going on with these grain jars (first time). I am pretty sure my sterile procedure is good - PCed for 2 hrs - I brew beer so have a lot of cleaning solution, etc. But the syringe was a year old... so I wasn't expecting any real success.
Growth started out slow, but looked pretty normal given other pics I have seen. But now all these jars are noticeably fuzzy on the top; similar pics have been labeled as ok or bacterial - bacterial is fine and I'd sort of expect it, given how old the syringe was and I probably shook the jars too hard and split some grains.
So I spawned the farthest along one to a shoebox - very distinct smell of mush and an sharp aftersmell of acetone? rubbing alcohol? it wasn't apples. Maybe it was... the other colonized jars I have opened to smell have no smell and they look just like the first.
The box is 1:1.5 coir and it has seemed to be going good, but I am getting neurotic (had all sorts of issues last time - trich, too hot, long strands of myc escaping the jars...I did some silly stuff in spawning the cakes)
But I can't figure out what this new grow might be - it has obvious rhizomorphs, but the stuff is so fuzzy which I have never seen before. I can't find anything very comparable in the searching I've done over the past few days. Yeah, maybe, but .... the obvious problems are obvious (I certainly do know what trich is).
The attached pics are a bit unfocused (only have a phone camera) but I hope they show the essence of this mystery fungus - the fuzzy and thick nature of it. It is white and I don't think the 'slushy like ' parts are cobweb - not disorganized enough. The first pic is to show how one spot is getting thick and has tendrils. The 2nd is the underside of the box; I tried to get a pic of the rhizos. The jars in progress are also thick and silky.

If it is all good, then the myc will start to join up and form tendrils after the substrate is all colonized? If things are kaput and all these jars are bad, I don't want to be in agony for another month.
So what do the lords of mushroom have to say? thanks for the advice!

I have now opened up a third jar that has been colonized for a week+ - it smelled quite off in terms of sourness. So I am afraid my paranoia was warranted - this thick top fuzz is not good. A couple of other jars are not so bad, so I shall not toss everything just yet.
tomorrow I will post some good pics for the people with questions to get an idea of what to _not_ hope for. I bought some h2o2 so the before and after pics of these shoeboxes ought to be useful...
this is truly a frustrating hobby. a few of these jars had really sudden growth of myc after going slow for a week and a half - that was initially encouraging but now I realize it was this not-quite cobweb probably.

Patience... oh yeah, definitely.... I forgot all about that (it has been awhile). I like being neurotic, it seems. thanks for the welcome!
I fortunately got caught up in work (and now the coronavirus) and so "forgot" to obsess / ignored it. things are looking VERY good right now - lots of knots, a bunch of pins and a few monsters already a good 1/2 in tall. the yield is probably not going to be superb, but at least all the time wasted so far wasn't a bust. So I think all these jars, except for the 3 stalled, will be ok. I am trying to jumpstart the stalled thru a bit of extra heat, but we shall see.
For anyone new at this reading this.... my big issue was the 'wetness' of the myc and the fact it wasn't so thick as I thought it ought to be based on other's pictures - the cloudy fluffiness of it was confusing. Other pictures look like the myc is sort of flat and more frosting like.
And the noticeable sweet smell has disappeared - it wasn't sour apple, but it wasn't mushrooms. perhaps rotting coir smells ??? But I can REALLY recommend the SFF shoebox tek - it seems to have gone quite well so far.
In any case, if you are not sure of what is happening, just wait. If it still all eventually goes to hell, it is still a successful science experiment and you have learned something.
