What's your Pepper of choice?
    #26510755 - 03/01/20 04:15 AM (4 years, 1 month ago)

Which pepper is your favorite?

Me, I'm a lightweight as to scoville units, but I have a real fondness for Chipotle, smoked jalapenos. A lot of flavor, not too much heat so you can eat more an enjoy it more.

Whats your pepper of choice?

Big fan of bird's eye. I soak them in oil until they come apart, the flavours are just insane.

I've also got a citrus pepper that tastes pretty awesome. I dunno if the taste really is citrus to anyone, it doesn't to me, but there's an awesome range of flavour in there. Great chopped fresh in stir fry and soups.

What do you mean, you soak the fresh peppers in oil until they turn to mush?
Like making a fermented chili paste?

Kinda like that. Cut the ends off them so the oil can get in, put in small jars with oil, heat in hot water for an hour or so, seal and leave for at least a year. After that they are almost falling apart. They're soft enough to spread on toast. I've had jars that are 3 years old before. So tasty. Stuff just gets better and better with age.  :awesome:

Going to second bird's eye chilis. I grow a bunch of them and cook with them a lot. I order dried/ground in bulk from thailand, definitely my favorite chili flavor, both dried and fresh

I like scorpion too, they have a deeper earthier flavor which works great in hot sauces. Scotch bonnets are my favorite for jerk chicken or any type of grilled food. Habaneros for a snack... dip the pepper straight into some maple syrup or honey and eat it whole... yumm :sun:

I don't think I've tried birds eye. I will hunt some down.

Hard to choose a favorite.
Many different varieties for their purpose:
Guajillo in Mexican food,
Korean red chili flakes in Chinese hot oil.
Chipottle to add flavor to sauces and meats.
Green New Mexico for burrito sauce.
Stuffed jalapenos
Aleppo pepper, paprika, chili powder...

If I have to choose a favorite - habaneros in my home made portuguese chouriço sausage.

IMHO the scoville scale is misleading.
I have had Jalapenos burn up my mouth, yet I have had habaneros that are very tolerable.

According to the scoville scale the habanero is 80 times hotter than jalepeno.

My point is, don't let the numbers scare you.
If a pepper has a scary high scoville rating cut out the seeds and placenta and try it!

my only experience with chipotle is with sauces, maybe 12 months ago I got a chipotle hot sauce marked down 50% to a dollar, I put it on some ground pork, it was pretty good, wasnt too spicy

I love scotch bonnets. Then orange  and yellow habenaros.

I make my own hot sauces and love to experiment with flavors.

I made habenaro jelly last year with my red currents and it was a hit with family and friends.

Yeah scotch bonnets and habaneros are my favorite too, particularly orange ones. Not that I can tell the difference between the two. I feel like they are alternate names for the same thing. Good balance of heat and flavor.

If you like those I strongly suggest scotch bonnet cappuccino. My favorite chocolate pepper. Great flavor and much less that battery acid taste that chocolate habs get
