Pasteurization

Finally I've been able to properly pasteurize a batch of jars after a few attempts that involved wild temperature swings and me using tongs to move jars out of water that was 170 degrees and rising.  I figured out the secret.  Wanna know it?  I just followed the damn directions I'd first read and didn't try to second guess them.
I know not everyone pasteurizes their sub and more than that don't both use and pasteurize a casing but I'm learning and trying a few variations at a time and, at a minimum, I thought it would be better to have that skill than not.
Anyway, I read that I should measure the temp of the sub, bring that temp up twenty degrees, kill the heat, watch.  But I refused to believe that the stuff in that jar could go from 95 to over 140 and stay there for an hour while the burner was off.  Turns out it can.  This time I followed the directions to the letter and the results were nearly perfect.  I peaked at 165 and it dropped past 140 at about 58 minutes- but I realized I could have probably tweaked that a little by using the lid and without even turning the burner back on.  I also learned that if you're doing a partial batch you can fill the empty spots with water-filled jars and that will avoid rattling AND make the technique more effective because of the added heat sink.
Funny how easier things can be when you get out of your own way.

yeah once you figure out what worls its second nature. i use my pc and once i see the first sign of bubbles innthe water i shit the heat off pop the lid on and walk away

I also used mine, Presto 23.  I'm getting more use out of that thing than I thought.
