After colonisation, the instructions say to dunk the cake in water for 24 hours... is this common practice?

No need, when you open your spawn at full colonization you're no longer working in sterile conditions anyhow.

Ok, looking good so far, these pics are a couple of days old so there's a little more progress. The pots will definitely be ready to fruit sooner than the box.

What lighting do you guys use for fruiting? I read that blue LED light is good, any opinions?

Allegedly some types of shrooms prefer some light wavelengths more than others but it is mostly hearsay - basically everyone agrees that "white blue" light that closely resembles ambient (not direct sunlight) outside light is the best and its presence helps.
However, shrooms, are not plants so they don't need light to grow but it still helps - it serves mostly as a guide (grow towards general light direction) and clock (12h light/ 12h dark cycle).
What you want is a light (LED) that has the colour temperature ranging from 5500K to 6500K. You should be able to buy lightbulbs and LED strips with this colour temperature easily (amazon, ebay, some local shops).

This is really helpful, thank you! My grow will be placed in a well lit room (natural lighting), I was wondering if providing my own lighting set up would be better.
The light you you mentioned "LED 5500K-6500K", would that be pointed directly at the mushrooms?

Have a read here : https://www.shroomery.org/forums/showflat.php/Number/14871014/page/1 (a bit old but almost everything there is still valid).
Basically it does not have to be direct but it can't hurt. Some people here who run a lot of boxes at the same time have created quite elaborate lighting setups with multiple levels etc. Majority just have a light or two on one side or the top and keep boxes stacked so the light is not direct.
edit : RR here says that side lighting is superior over top : https://www.shroomery.org/forums/showflat.php/Number/14525346 (but I reckon this is more important for grow spaces that are not exposed to ambient/window lighting; I think most amateurs just keep boxes on a shelf on the floor in some kind of room with a window; so they don't sit in darkness anyway).

Ok, so it's a sad night for Mavaron, I came home from work to find that my large grow is showing a lot of sudden contamination, this wasn't present this morning and seems to have appeared very rapidly. Everything looked fine until now and I'm not sure where I went wrong or how I could have avoided this, the only thing I can think of is the change in temperature, I had a new boiler fitted yesterday and so had to move the boxes around a couple of times, as the boiler room is where they were sitting since day one. The other 3 smaller pots are looking good and showing no sign of contamination. So let's break things down a little.
1. The box and three pots have shown a little condensation on the inside (looks like they're sweating) for a few days now, maybe a little visible in the pictures above. Is this normal, or is it a sign that something needs to change?
2. I've kept them at 26 degrees up until the last couple of days where the temperature changed due to the boiler circumstances, moving them around to different spots meant the temperature fluctuated between 20 to 24. I came home today to find that the boiler room wasn't as warm as I'd hoped, the temperature was 19 degrees. Has this contributed to the contamination? The other three pots aren't showing any signs of green, so I'm not sure if this is the cause.
3. I was very sterile in the inoculation process and took all necessary precausions, shower, gloves, mask, sterile surface, alcohol wipes, sterilisied syringe etc. The mycelium is looking good and advancing well, and the green mold isn't growing on the mycelium, it's appeared suddenly on the sides. Does this mean the kit was compromised before I even started?
4. Is there any way that I'm wrong and the box is still salvagable, or is that it for that particular one?
Any answers to these questions would be very helpful folks, it's a sad night for me but make no mistake, I'm a determined ape and this is only a hiccup in the great journey.

Looks like aspergillus, penicilium, or some other green mold. It will likely spread quickly in the next few days.
Could be an issue with how the grain/spawn was prepped? Was it pre-sterilized as part of a grow kit? Could have happened then, or when you inoculated? I'm not familiar with that box style.
And the drop in temps wouldn't be the cause, bacteria and mold favor warmer temps.

The kit comes pre sterilised, but I'm thinking maybe thia one wasn't 100%. I was thorough whilst inoculating and the mold seems to be seperate to the mycelium, which I think indocates that it wasn't my doing. The other kits are still good so I'm thinking it's an isolated incident.
I've followed the PF method and sterilised a couple of my own jars today, I'm naking up for the loss

Yeah, it was probably something that got in when they kit maker was sterilizing. That's why grow kits are iffy, hard to know what methods were used.
Great to hear you're doing it on your own, I'm sure you'll have success that way

Kits are pretty notorious for having a high contam rate. It looks like you were on the right track though. Keep reading through posts here incessantly. it really helped me when I started out. Try and find a PC as well!

You mean a pressure cooker?
I've had a terribly hectic day yesterday and fear that I may have rushed the new jars, the brown rice I grinded wasn't fully ground to flour, during sterilisation some of the rice grains cooked and are now white. Nontheless I inoculated and will wait for the results.
I built my own incubation chamber using an aquarium heater and 2 plastic containers, I want to maintain a steady temperature this time.

I think that was the issue, not well sterilised. I can only learn and improve so moving forward I'm confident that I can do it myself from scratch.
Question.
So far I'm using PF Tek, but what other methods do you recommend for psilocybin growing, has anyone found another technique to be more effective?

Do some research on the incubator before you decide if you really want to build/use it. Most deem them unnecessary and cause more issues than good.
A friend gifted me theirs once so I tried it, and found it to get the grains wetter than I liked. So I scrapped it. Never had a problem without it.
