Favorite agar brand? Favorite brands for other materials for agar?
    #26495914 - 02/20/20 07:24 PM (3 years, 11 months ago)

So I’m literally ordering my agar materials right now. I’d rather get quality materials if it’s worth it and not too expensive. I was planning on doing pasty’s agar tek, but open to other opinions.

The only brand of agar I’ve read a decent amount about is telephone brand. I’m not going to make any other posts like this, but I figured it was a decent question to ask.

The brand doesn't really matter as long as it doesn't have other ingredients. Powder is IMO easier to measure and use. Telephone is probably the most common brand to see in mainstream stores and it works like agar should.

I use dry LME because 1.) I home brew too and 2.) it's cheap, effective, easy to measure out for a repeatable recipe, and leaves only minor sediment.

You can get Powdered for Vegans or milled out grains for Asians or Telephone brand. They all work just fine. I use LME because a little goes a long way, I also have experimented with Corn Sugar (the kind used for carbonating post fermentation) with pretty similar results to LME.

Telephone is great. So is the "now" brand found at natural food stores. Everything thing I've tried does at least work though.

That now brand stuff is pretty expensive though no? When I first started doing agar I got some now brand agar. I still have the container I fill it with telephone brand agar it seals airtight and it's easy to pour out slow for weighing.
I'm going to start ordering agar online I can get it locally but it's 3 bucks for a packet of telephone brand the store owner is a asshole and they have a 20 dollar minimum in store if using plastic which I do most of the time (I know but it's habit never have cash on me anymore).

Question. Any of you guys actually tried agar. Like ate it? I was thinking about trying it but I don't think I'd like it if hate the texture of jello. Can't do it.

Agar by itself is going to be pretty bland.

So the other ingredients don’t really matter? Like some people use LME and such and other users honey and such. Thoughts on that? I ended up not ordering last night and I may be over thinking it. I just want to get the right items, even if it’s a touch more expensive.

Telephone agar and some LME will keep you busy for years. If you prepare grain then you have free nutes for agar as well.

I wouldn't sweat different recipes right now, the differences are pretty minor all things considered.

Yes I was talking about making it with sugar and some kind of flavor. Like the recipe on the back of the packet. I was wondering if anyone has ever made a jello type dessert out of it and tried it. I've seen recipes on YouTube but I just hate jello so I'd be biased against it lmao.
But shit by itself too I'm sure one of these fuckers on here has tried it. Either that or talked the significant other into it.

Op there are plenty of different nutrient sources you can use for agar I prefer lme but also use alot of grain water.

And gizmo I have no idea, but really jello is pretty blah in my opinion and asian desserts have been disappointing as well.  Chocolate is alright, those Mayans knew the good stuff

I'm only lazy about a few things in life, and agar is one of them.  I buy pre-mixed MEA from (Seaweed Solutions, I believe?) Amazon, and use iot for everything (although I use more H2O than they suggest).  Still lasts forever and with Prime I don't pay shippinng so it's all good.   (I know it's a late reply but I wanted to use this as a way to confess my laziness...) :bongload:

Not really. Grain soak water, malt extract, potatoes, rice flour, etc. can all be used for the nutrient portion.

I've had desserts made with it. The texture has similarities with gelatin, but it's still a bit different, maybe more rubber-like. The firmness can also be adjusted (as we know from pouring plates) by varying the agar concentration. Straight agar gel has practically no taste at all. I tried some leftover MEA and it had the flavor of extremely diluted, flat, unhopped beer.

:laugh2: i always wondered what it would be like to eat it, since it basically is jello.

I don't suggest ELME, or at least not Munton's brand. Switched to LD Carlson Maltoferm LME and had much better results almost instantly.
