Hot Sauce 5

What's your favorite hot sauce?
Cranky Rooster sauces are my go to right now, 6/10 heat level for me and very little vinegar, so you really get the pepper flavor and the heat isn't too much to enjoy a lot of it.
Angry Goat Pepper is another really solid brand with hotter sauces. Sweaty Beaver is my favorite one, followed by Demon Reaper and Hot Cock. Gotta love the names , I guess they never planned on being on grocery store shelves
At a restaurant I actually really like Tabasco. My favorite is to dowse my fries in it and black pepper. I also like Frank's in a buffalo sauce
Here's the current collection, it's a shell of its former self due to budget constraints, but still does the trick

A little spendy but soooo delicious.

Nice, a thread I can get behind. Great collection!
Hot & Spicy every day man!
here's a few I've been draining a bit more as of late (as they were sitting on my desk).

The Stargazer is a killer for SURE, and the other two are still superhots, but not quite as hot as the Stargazer.
Otherwise, I have a whole shwack of em' in the fridge; I love Secret Aardvark Sauce, unreal with pizza for sure; and just about anything else. (Their whole line is delicious, (not all hot sauces).
The acid rain in that pic is also delicious, but I recommend the original recipe without scorpion pepper, as I believe the pepper mix was perfect in the original recipe, and moruga adds a lot of flavor that doesn't quite harmonize as well as the original.
Hitari acid rain is 10/10 dump it on sauce. also pretty hot, but the flavor keeps ya digging in.
Also, I have one of the Keygoes Chili keychains with refillable cartridges. so I can make anything spicy!

El Yucateca XXXtra hot is my favorite currently. It's not particularly hot Scoville wise, but it definitely hits above its rating. That said, it's incredibly rich and flavorful. It awesome on all sorts of stuff. Vinegar rich hot sauces aren't great, IMO.
I had some Ramen last night that was supposed to be hotter than the XXXtra but it wasn't even close, and the flavors weren't as rich. Though the noodles themselves were absolutely out of this world good.
I really like making hot sauce. It's quite the challenge.

Those sauces look really good... gonna check out Pepper North
And I'm loving the keychain, might need to get one to smuggle my reaper powder into some restaurants. There's this one Thai restaurant I've been going to for years, they let me order by how many chili's I want in the dish. I'm up to 30 in my yellow curry, the chef lady made fun of me and said she uses 35 when she cooks for herself . Thai and Indian spots are really the only places I can find anything that's actually spicy, and even then I usually have to convince them that I won't send it back

Damn, I hear ya - 30 peppers eh? Those little green guys, shit they're hot.
Me and my Dad go to this Thai restaurant, and that is the only place I can get what you're describing, they'll make it as hot as we want, we'll just sit there and suffer; great bonding. haha

I keep a bottle of Dave's Ghost Pepper or Insanity sauce in the fridge pretty much at all times. I'm addicted to serious heat and Dave's provides it. One drop is gasoline.

Got these in the mail last week:

The middle one is definitely my new favorite. When I used to go to the USVI, all the restaurants would have homemade or local sauces on the tables... this one reminds me exactly of those. Scotch Bonnets with jamaican spices, curry, garlic and scallions/onions. Heat level is probably around a 5 for me which is great because I can just douse whatever I'm eating. Probably going to buy a case, I just saw they have an Xtra Hot and a couple other varieties too I want to check out now.
The two on the outside are superhots (rated 10/10 and 10+ for heat on the website) , jay's peach scorpion ghost on the left and reaper/7pot/scorpion on the right. Both are fantastic.

Starting to eat healthier so these should help flavor things up. The one on the far right is my favorite, it's a tangy curry one
Some other newer additions as well-

I recently tried Secret Aardvark, specifically their 'serranbenerno' sauce, with those two peppers mostly. It had an amazing flavor. Not the hottest I've ever had, but I could eat it all day on stuff because of the complex taste.

I live in the tropics, food needs to be kept cold or it will turn. When I lived in a more temperate climate it went in the pantry.
I even keep potatoes in the fridge. The only things that don't go in there are bananas and avocados, they get eaten quickly too. The other week I bought a bag of juicing carrots on Wednesday night, it was too big to go in the fridge so went in the pantry. When I went to juice them on Sunday they were rotten, leaking rancid carrot guts and falling apart. Pretty wild.

Hell yeah. I'm thinking of subscribing to a monthly hot sauce delivery thing where they send you a box with like 5 new ones every month, you pick the heat level.

Most don't need to be refrigerated, especially the ones with lots of vinegar. Some definitely do though, usually it'll say on the bottle since certain ingredients will turn south pretty quickly if not refrigerated.

Guys, this thread is fuckin genius. All my years here I can’t remember a hot sauce thread. I love the shit. A couple years ago I had this stomach thing where I had to avoid hotsauce for like 5 days, halfway through day 1 I had a realization that Id used hotsauce with every meal.
When you eat that much you also forget the tolerance for normal people. Like I’m sure for most of us habenero is nothing, but I’ll make meals not really thinking about that and people trying it are like coughing
I gotta say, my #1 all time has to be tabasco. It is just such a perfect simple sauce. I would love to say it’s some rip your head off ghost pepper but honestly I eat Tobasco more than any other. Followed by Tapatio.
For the unique sauces, try Chone Habenero/Ghost. $20 delivered and fucking worth it. I would eat it with every pizza if not for the morning after. Plan your work accordingly.
https://www.chonehotsauce.com/store/Chone-Ghost-Pepper-&-Habanero-Hot-Sauce-10-oz-p91560822
I would give a big shoutout to Scotty b’s ghostly garlic. I think the guy died or something because they don’t make it anymore. Had I known I would’ve bought a pallete of it. It might have been the best hotsauce I’ve ever tried.

Any ghost pepper or extremely hot habanero sauce is amazing. Tropical pepper company has a great ghost pepper sauce and so does Melinda's. There's a fruity tabasco habanero sauce thats amazing and their scorpion sauce is also very good.

And to think this thread is simply called "Hot Sauce".
I enjoy a nice habanero sauce and Cholula. I know, Cholula isnt really hot but it says "Hot Sauce" on the bottle

Cholula counts for sure. IMO it is more on the flavor side, which is great for some, but all honesty I do miss the heat from that one a little bit.
Just an idea but maybe we should work together to perfect a shroomery hotsauce recipe. Something we can make forever without fear of some company going out of business, that bears the brand, and is the best hotsauce ever made.

Maybe the first thing to ask is how hot should this sauce be?
good old scale of 1-10.

Huge hot sauce fan here. I have 14 open bottles in my fridge currently. Something at most meals usually ends up getting hot sauce on it.
A good one I had recently was TRUFF Hotter black truffle sauce. The flavor is big on that one and it even has a little kick to it.
I always have at least 5 or 6 Reaper/Ghost/Scorpion heavy hitters on deck but Dave's Gourmet Ghost Pepper is my staple store sauce and bats cleanup.
I love making hot sauce as well as growing peppers. No crop this year but I have plans for next year and I'm gonna try to make some hot honey.

TRUFF has jalapeños, if you like sriracha you will love TRUFF, they are very similar but with TRUFF having the mushroomy/truffle earthiness flavor going too.

Here's an old thread I attempted in Culinary:
I'm a hot sauce lover to be sure, but I don't really have one sauce I'm married to. On the longevity mark, I'd say I pretty much always have Sriracha or a very similar less blended sambal in the fridge. Marie Sharps holds a special place in my heart, but these days I've gravitated toward the Kauai Juice Co's line of hot sauces, which tend to be a bit more fluid in texture (their kiawe smoked and hot habanero are two of my favorites, but honestly I like 'em all). I've also been buying a lot of Char Man, which is made fairly close to me in Ojai, California. Their Original and Carribean sauces pack a good punch. I also just picked up a newer release Fiyaberry, but have yet to try it.
Hell, while I'm at it... here's a quick photo op of what I have on hand at the moment.
- My reserve batch in the pantry (because you always need to have backup):

- My current active set:

- Some of the more cooking-oriented heat liquids:

Honorable mention to Cutino Miso sauce, which I picked up on a visit to Arizona a few months ago, that stuff was rather tasty! Not super hot, but very flavorful and packing enough heat to satisfy my needs on the road!

You get high from any high amounts or capsaicin. Seeds or not. A big misconception is that the heat is in the seeds but really most of the capsaicin oils build up in the placenta of the peppers.

Ah, i ate them with seeds, and i ate them without, and the seeds made me nauseaus. I don't really agree with eating baby trees, might have been my mind placebo, I do see a feedback mechanism of philosophies someone is monitoring in me

The seeds definitely don't seem to get digested as easily, and often cause stomach pain for a lot of people.

I don't really have a favorite. I may buy a brand for a bit but eventually I get tired of it and try something new. I like to have two sauces on hand as well: one that is more tasty than spicy and one that only needs a drop to get my mouth/eyes watering. I don't fuck with Ghost Pepper though, that shit is disturbing. Habanero and Jalapeno are pretty good bases.

Nice Geo! I know even after posting that I was thinking for sure there had to be a prior hot sauce threads, probably even ones I’ve made and forgotten about.
I like the methods you used in creating yours. Specifically keeping some texture/pulp from the fruits present, as well as adding carrots to balance against the heat. I once also made a carrot base for a habenero sauce which ended up being pretty good, I think mine ended up being too sweet for my liking.

I'm no hot sauce connoisseur, but I do enjoy a good hot sauce. My favourite right now is a ghost pepper sauce by Melinda's. Awesome flavour (as ghost pepper sauces usually are), quite a bit of heat, and a very affordable hot sauce. It costs half of what I've paid for a ghost pepper sauce in the past I use it on a ton of different foods, it's delicious stuff

So I had a septoplasty yesterday to get my nose fixed from all the kilos I hoovered up with it in my 20's. (yes it was totally worth it) The kicker now is that I'm not allowed to eat hot or spicy food for a week. Last night's dinner was the first without chilli sauce in living memory. I think it might be addictive even, I keep getting caught up thinking about it. . Didn't realise it could be like that but it should have been obvious with how much I like the stuff.

I'm not a big fan of the wave of 11/10 heat sauces all at primo prices. People are mad for the stuff though. I wish there was even more in fact, competition would drive the prices down and force innovation.

Playing with dopamine when you get in deep with the sauce man, is capsaicin addictive? I think it's at least habit forming.

Just grow your own high level peppers... it's pretty easy
I traded some Jamaican lady some tomato plants for all my rare peppers, but she grew them from seed... so yeah.
The problem is that peppers are open pollinated so from seed from second generation could give you some wacky strain

Oh yes, totally. once you get into it it sure as hell is addicting.
The hard part is getting through the initial pain first though.. THAT always sucks.
I'm in bad shape right now I let my tolerance go down.
The butthole pain just ain't right sometimes lol but that also brings dopamine as well. Talk about a pain in the ass lol.

I suspect it is mildly addictive. I've been eating the stuff daily for decades. Nothing else has stuck with me like that.

I've been growing them and making sauces a long time. But I do enjoy bought sauces as well. There's like a million ways to make chilli sauce and so many tricks to get the flavour just so. It's not like ketchup.
I like YouTube channels that do sauces as well. There's this South African guy who lives in the UK who has a channel called ChilliChump. He's pretty awesome, so much skills and knowledge on the topic.

Found this gem at Sams yesterday - $14. Sometimes they get the most random stuff in. I tried all 6 bottles with my brothers. They were all delicious. I had a stomach ache later

Heatwise it’s was tolerable. I wasn’t sure if the last two would be unbearably hot or something but they didn’t go that way.
Only reason I got a stomach ache was from mixing a bunch, though I’d think a lot of scorpion could potentially do the same.

Seems like a good idea not to eat so much it causes a critical meltdown in your stomach.
Though I've done the same and worse. Sat on the toilet the next day crying.

I'm in my early thirties now and I cannot handle as much hot sauce as I used to. The initial heat while eating is fine, but my digestive system gets absolutely wrecked now if I overdo it, with severe heartburn that is quite unpleasant and even debilitating. I noticed my dad really doesn't like the spice he used to like as he has aged. He introduced me to Tobasco when I was little but he probably hasn't bought any in 10 years. He keeps a bottle of Louisiana in his fridge and he puts pickled jalapeños in his meatloaf, that's about as hot as he eats anything now.
I used to eat hot sauce with most meals but now I'm using hot sauce on food about twice a week.
Melinda's is good, I use their ghost pepper wing sauce as a base for when I do wings sometimes. I mix other hot sauces with it, often it's Dave's ghost pepper. Firehouse Subs carries Melinda's and Dave's, I should go there for lunch sometime this week.
I have had 2 of the Paqui's One Chip Challenge chips for over a year now because I can't find anyone to eat them with me for a laugh. I might just eat both at once.
Has anyone tried any of The Last Dab sauces from Hot Ones? I watch the show and have since it started, but still haven't tried any of their stuff. I think they're about 20 bucks a bottle I just haven't pulled the trigger yet.

I had do a run of pantoprazole to treat gasto refulux. I ate spicy stuff non stop for a long time then about a year ago anytime I ate something spicy I would end up throwing it up. I could eat the whole meal but then like a half hour later start barfing. So I stopped eating a lot of spicy stuff and that helps for a while, but then later the vomiting actually got worse. I was throwing up like three days a week. So I went to the doctor and was diagnosed with severe acid reflux and put on panoprazole for a while. The problem is completely solved and I can eat pretty much whatever I want again. If you heartburn is bad, you should go to the doctor. They can probably get you fixed up pretty quickly. Even over the counter Prilosec might get you back on track.
I have a bunch of the Hot Ones sauces including Apollo. Apollo is great for cooking but it is too hot to eat in any meaningful way, IMO. I can put some a chip and eat it, but the flavor isn't amazing, it's tolerable, but I don't know why anybody would really want to eat it straight. Their Los Calientes original is the best taco sauce I have ever had. It goes so perfectly with a taco.

LOL, I see that one can score a pack of 10 of those chips for $8 at the moment on Amazon, and while I was initially intrigued, after reading the reviews, I'm definitely not interested in willfully exposing myself to that level of apparent pain.

Over on the far right, got gifted it from a friend and it's actually got a really nice flavor. It's got a pretty high heat level but it's not just stupid hot, although for that reason, I often end up going overboard because I like the taste enough to compel me to eat more of it than I probably should. Fortunately I have no issues with reflux, but if I'm drinking heavy and eat a bunch of hot sauce and/or fatty food, I will be having multiple spicy butt rounds on the porcelain throne to be sure.

El Yucateco Xxxhot Habenero is my go to hot sauce. A little goes a long way but there is flavor behind the heat. I had it in a taqueria once and was hooked from the get go.

That triple X is one of the most well rounded hot sauces and nobody even talks about it. It has a ton of flavor but is hot too.

I didn't like the XXXtra hot or the black one all that much. El Yucateco red habanero and green habanero are both very good tasting to me.
I get a local brand called Alabama Sunshine sometimes, their ghost pepper sauce has a good kick but it's not overwhelming as it's first ingredient is Tobasco peppers.

I had this like habanero jam/butter kinda thing once and it was so crazy hot but it was hard not to eat it because it was so sweet n delicious. I failed a local food challenge and the owner gave me a jar on my way out because I came through so often and I basically inhaled the jar. Definitely the tastiest hot anything I've ever had. He had me putting it on like 8lbs of pulled pork poutine
