Images that have file extensions of .jpg download as .webp

Ive tried saving some of my pictures and though their address ends in .jpg in the URL they download as .webp and that is one irritating format. Oddly this doesn't happen to every one of them only some.

That's intentional; we serve webp format to compatible browsers when it will provide bandwidth savings over gif or png or jpg. It's a tradeoff, since webp is newer and not as widely supported like you said. But a lot of people are just viewing images and not saving them, or they're accessing the site over a metered mobile connection, and webp can provide up to 30% better compression so often it's worth it.

Depending on what app you use for images there may be a plugin for webp. For example here's one for Windows Photo Viewer and Photoshop. It's an open format that's probably going to see increasing use on the web, so it might make sense to just bite the bullet and figure out a way to integrate it into your workflow.

Alternately, as a workaround, you can add a question mark to the end of an image URL and it should be served in the original format without webp optimizations.

Or if you really don't want to be served webp files at all, the easiest fix would probably be to spoof your user agent as an older browser which doesn't support webp. Here are a couple options for Chrome and Firefox. There are other ways to accomplish the same thing, like modifying the "Accept" header sent by your browser, but they're not as straightforward and don't always work on every site.
