So I grew these, but would like proper ID as I am paranoid and it's my first time.

They are also a bit mutant so some of the characteristics don't match up with what I've read.
Habitat: SGFC
Gills: Purplish to brown, attached to stem

Stem: White to yellow, even darkish yellow, looks strangely shiny/silky sometimes

Spore print: Looks more black than purple/brown?

Cap: Brown/Tan with a brighter spot in center, some have a darker spot with splotches of lighter colour? Also some have white spots on them and look mutated.

Bruising: Bruises blue very easily and obviously.
Scent: Smells like mushrooms pretty much.

Yes, obviously P. cubensis like already said, the long skinny ones maybe due to high CO2 content in the FC.

Yep it definitely had too high CO2, they grew mycelium from the stems too, not sure why my SGFC has such bad airflow, it's got holes all over it.
Ok can I ask another question in the interest of learning instead of just getting answers.... How can a mushroom vary quite drastically from the description but still be confidently ID'd?
For example some of my shrooms have a white circle around the outside of the cap, and on some of them the cap is darker around the outside (not damaged, just turned a weird dark brownish in some areas), and some of them have a dark ring in center which is lighter inside which I assume is the nipple they sometimes get but it looks different on these.

For example I doubt a layman would say my shrooms are the same as these

Yeah those things are starving for fresh air. Mushrooms look different depending on the conditions they're growing in, but yours still have the typical cube features like gold cap, white stem, veil, and bluing.

Hm ok, so it's basically looking at the main distinguishing features in combination, and any variations are considered environmental unless they match other species?

Yeah, your mushrooms don't fit anything but Psilocybe cubensis. Classic example of dramatic phenotypic variation is wild vs. cultivated enoki. In that case, not really sure how you could tell it was the same species without DNA sequencing.
