I think you mean that you would rupture the cell wall because of the salt. This usually happens the other way around, though I'm not too sure about this case. When the ionic force (concentration of salts, to simplify) is higher inside of the cell (e.g. cells standing in distilled water) the cell will start absorbing water to equilibrate the concentrations. In a high excess of water, the cell wall will eventually burst letting out everything inside. When you are putting your mushrooms in salt, the opposite is happening. Water is being drawn out of the cell, causing it to shrink, but it should still retain the integrity of the cell membrane.

About your idea, the only problem with it is that the moisture content inside the mushroom will never be as low as when you dry them with a desiccator. This might work if you only want to retain the taste or even savour the aging of something like sundried tomatoes to use in your stew, but the psilocybin in the mushrooms will degrade ever more rapidly as moisture content increases. True, they probably won't go bad, but they will lose their potency nonetheless. You could dry them in the kitchen oven with the door open and a fan of some sort, but the time you will have to spend to dry them this way is probably worth the 35 usd for a dehydrator.

makes sense, i though that rob of water from salt coud be so violent in a point that it bursts the cell out, isnt that what it makes to bacteria and stuff? and i wouldnt expect that psilocybin degrades on water, thats curious.

It seems that next time im going to use the fan, or even freezing or diapers as some sugested, cant afford dehydrator right now, this kind of stuff get heavy taxes in my country u.u' , thank you all for the incentive for experimentation

You can find food dehydrators at goodwill/thrift stores for like 5bucks.

High salt concentration draw water outside of cells. Bacteria are cells as well, and even if different from eukaryotic cells (like mushroom cells) they still need water for their basic functions. The low amount of water makes life unsustainable, but it doesn't rupture them. A way cells are ruptured is, for example, by freezing them. The water will form tiny crystals that will pierce the lipid membrane poking lots of tiny holes inside it. Regardless of the method, whether you dry them or freeze them dead cells are dead cells, though bacteria are quite resilient, much more than mushrooms cells, and some will survive.

Well, it's not just psylocibin that degrades in water, most substances degrade in water from a variety of different microbiological and chemical processes, much more quickly than when they are dry.
