I don't grow reishi nor shiitake, but I do grow Lion's Mane. I do not rehydrate in between flushes. I have found that rehydration between flushes for the various types I have grown invites contamination.

The shiitake you can hold under water and give the block a squeeze, you will see a bunch of tiny air bubbles come out.  Keep doing that until it won't suck in any more water.  I never had much luck getting them to flush again though.

Reishi doesn't care, you can leave it submerged overnight and it should start the 2nd flush pretty much right after you cut the first one off.  If it doesn't, you might as well bury it.

Lion's mane I never tried rehydrating, I'd just throw outside and maybe get a 2nd mushroom, after that they would mold.
