PC Fail

After preparing all my half pint, short/wide brf jars, I PC'd them. PC calls for 3 quarts of water and a couple tbsp of white vinegar. The jars sit in the water a third to half the way up. First batch wasn't a problem but the batch I PC'd last night shows wetness in almost all the jars. What could have happened and how to prevent it?

Did you put foil on top of the jars?

Idk man. Maybe too much water. As long as it doesnt boil dry then the amount of water isnt a big deal

Bring your heat up slower. Every time I rush my pressure cooker I get a shitload of moisture in the jars. Idk why. I heat slowly and jars come out dryer. Also maybe try bring the edges of the foil up you dont want them down in the water they can kind of act like a straw pulling up moisture.

Just curious ...
Are you letting the pressure drop by letting it cool or are you removing the weight after the timer for the PC cycle ends?

Are you doing 1 layer of jars or 2? If it's only 1 maybe raising your trivet with some balls of aluminum foil might help?

You Also only need ~2 quarts in my experience or less. I'd only run 3 if I was going for 3-4 hours.

Okay. I'll try to raise them so they're not sitting in water.
Also, I did not remove the weight until hours after I removed it from the heat.

It might also help to trim the foil up higher. Bubbling water can follow it up the sides and into the top.

Better be careful with unwanted moisture in BRF jars. Moisture in the dry verm layer defeats the purpose of it and allows outside contams to grow into the jar.

Yeah no water on side of jar is my rule of thumb. But when you are pressure cooking the entire inside of the chamber is water vapor so I think it might have to do with the size of the holes in your lids and the snugness of your foil.

When you start pcing where do you put the heat high medium low? I almost guarantee that heating slowly will fix your problem. Raising them out of the water wont hurt either but im willing to bet thats not the problem.

Also are your holes in or out? I mean when you made the hole did you flip the lid, punch or drill and then flip the lid so the sharp shit is facing up?

Another thing to compare between your two runs... Is how you cooled them down. If you removed the jars on the second round while they were warm, they will condense a ton on the walls of the jar, giving the appearance of being wetter than jars that very slowly cooled within the PC.

These two bags are identically moist, one just came out warm.

Good stuff folks. Thanks for checking in. Yeah I let them cool inside the closed PC overnight. Also, I started with already hot tap water (~130F) and turned the heat to med-high. I'll bring the heat up slower next time.

I start with hot tap water also and try to keep my heat under 6. Thats on a electric top that has settings 1-8. Im impatient but noticed the slower I heat and cool tge pc the dryer stuff comes out.
