Milk caps

One of my favorite mushrooms to gather up and cook.

Sierra Nevada foothills.

I just picked a bunch too. Never eaten them though. How do you like to prepare them?

Are they L. rubrilacteus?

When I find L. deliciosus I really enjoy to just slice them wafer thin and fry them up in olive oil with a little salt and eat them as a snack, maybe
with some kind of dip, made with sour cream and chives or finely chopped leek. Otherwise I'll sautée them in thicker slices and put them in a stew
perhaps with turkey, duck or wild boar. They add flavour to almost any dish in my opinion. Distinct yet versatile.

Spot on.

They are rubrilacteus.

I can’t really taste any difference between them and deliciousus.

Love them both!

When I cook them I usually simmer them long and slow in some beef or chicken stock.

After I’m done simmering I will sauté them and add to whatever dish I’m making.

I've been running across what I assume are Lactarius here in the SF Bay Area.  Also been assuming these are most likely not the edible kind.  As for L. rubrilacteus is the latex color the main identifier?

Yeah, dark red latex as opposed to orange in L. deliciosus.
