Premature Fruiting in Mason Jars. Wondering next steps.

Hi all,
I was waiting for full colonization. I went away for a couple of days and when I came back I had 6 jars with fruits in them. They are not fully colonized.
What should I do? Go right into the fruiting chamber? Harvest the current mushrooms? I'm also concerned about blueish/green color I'm seeing in one the jars. I've attached photos of the jars in question.

Birth them yesterday!
Remove uncolonized substrate and fruit dem cakes. Is the a hood in the background?

Haha fruiting before full colonization. This used to be called invitro fruiting. Ive seen some old video of a guy in california that was featured on one of those grow shows with like rooms full of invitro fruits. they look ugly and are a bitch to harvest but they do the job.

Did you apply that foil to your jars with a hammer or chainsaw?

Does anyone know why this happened? I've seen pins in vitro but never before full colonization

youll see that a lot in tall pf jars. big reason why any solid pf tek tells you to only use wide mouth half pints.
the bottom of the substrate becomes compacted and the myc cant/wont colonize(barrier) so it goes into fruiting mode.
or contamination(also a barrier). either way the myc hits a barrier and tries to reproduce. good obersvation
