This is concerning...
I have always left my plates @75F in a cheap styrofoam box so protect from temp spikes. This is true for my regular and antibiotic agar alike. I usually make 100x plates then spend the next few weeks using them up.
I had no idea people stored plates in the fridge or that they expired so quickly. I would have thought that there would be condensation issues from removing them to be used for xfers. Furthermore, I don't keep active mycelium in the fridge unless it's meant for long storage.
Having said that, my technique is FAR from perfect and I am always looking for ways to improve.
2 Questions: 1: What problems am I causing myself by doing things this way?(storing at room temp for weeks) 2: What benefits are there to storing plates in the fridge or replacing weekly? Thanks

1) None, you can store plates at room temp for awhile actually (weeks even months)
2) Plates stored in the fridge will generally stay fresh longer but Dude I have plates that have been sitting in my closet for over a month now and they are still usable...it all depends on the conditions in which you store them.
Plates, media bottles etc. of agar can be stored at room temp or in the fridge after sterilization and be perfectly fine to use as long as there is no breach in sterility of the media.

Its better not to use a fridge at all to avoid condensation in your plates

You can safely store them at room temperature for at least a month, probably longer. Store them in the sleeve or wrap with parafilm to prevent drying out.
